Simple Scones

Make this all the time! So easy to create your own variations. My favorite is orange zest, chopped up pecans (a little vanilla) and dried cranberries.

Sour Cream Chicken and Potatoes

What a strange meal. I was going to give this two stars because it was a bit bland then I realized I forgot the garlic in the sauce! I was really disappointed in the sauce and that's probably why. This recipe got a lot of great review, but I thought it was just plain strange. I've never put chicken on top of potatoes in my life. Worth a try at least once though.

Autumn Apple Tart

This was okay. I made a similar recipe years ago from one of my grandma's cook books...it was amazing! I thought this looked close enough. It wasn't quite the same. I followed the suggestions of others and doubled the topping. That was a good suggestion. The filling was a little bland. Next time I think I'll mix in a little lemon juice, cinnamon and brown sugar. It wasn't really a bad apple desert...it just wasn't fantastic. I'll put it in my recipe box until I find something better.....

Foil-Pack Chicken and Artichoke Dinner

I think the first reviewer may have had trouble with her rice if she didn't read that the recipe called for Minute Rice. It wasn't until I was reading the recipe for the third time that I picked up on that. Since I had only normal white rice I did what the second reviewer did, which was to microwave the rice for four min. The rice turned out just fine. I also put everything in a dish with a lid and baked it...which also worked... All in all my husband and I did not like this. It was worth trying once..the artichokes and tomatoes were a wonderful idea which I may use in something else, but the rest was too bland for us. I tried to think of ways to tweek the recipe but gave up since in reality I'd be making a whole new dish.

Steak Salad

I changed the ingredients of the salad a little to match our tastes and used left over Angus Tenderloin we'd gotten as a gift. Loved the dressing, but you have to let it sit, that is key.

Fettuccini Tomato Rustica II

My husband totally loved this. It is very very very rich. We loved the sundried tomatoes..but may I suggest serving a big healthy salad on the side. I don't think I changed a thing (for once!)

Beef Enchiladas I

I followed some of the advice from a few of the reviewers. The corn tortillas were a pain to use so our Enchiladas ended up being more of an Enchilada Lasagna. I also used canned Enchilada sauce, it was still good. We saved the sour cream to add at the end.

Honey Chicken Stir-Fry

In our house we rate recipes 1-10, this came out as an almost 7. My husband said it would be good to make again, just not too often. It's a nice recipe to use when you want to switch things upa little.

Meatball Spaghetti Sauce

Only used the meatball recipe. It's a winner. I changed two things and used itallian seasoned bread crumbs and only a fraction of the milk. Add the milk slowly if you're not sure how much to use. My 11 month old son loved the meatballs!

Pecan Breakfast Loaf

Absolutely wonderful! Quick and easy impressive breakfast. I almost always have a couple tubes of C. Rolls in my fridge since they can come in handy. We didn't have any pecans on hand (which made me sad) but it still turned out wonderfully. I did make one change though, and that was to use brown sugar instead of white...I already knew that I like cinn. rolls better that way. Totally yummy!

Cream of Sweet Potato Soup

As usual I used the recipe as a starting point and was pretty pleased with the results. Instead of putting potatoes in the oven I peeled and cut mine (only 2 of them) added an onion, wrapped them in foil and baked at 400 degrees for about 40 min till everything was soft. I used about half the broth, pureed the pototoes and onions put the puree on the stove to simmer and added a cup of coconut milk (I had some on hand that I needed to use up.) After tasting the mixture I added a pinch of brown sugar, the nutmeg, a pinch of ginger and a pinch of ground cloves. It tastes pretty good. The coconut milk adds A LOT. I can't imagine what the soup would taste like without it! Have fun with this one! You can do just about anything you want... (within reason) :)

Scottish Shortbread IV

I made a different recipe before I used this one. I have to say that the Brown Sugar puts these over the top! The only thing I changed was adding a tsp of Vanilla. The only trick is not to under bake these. Wonderful cookies! I think I'll go make some right now.

Christmas Strawberry Bread

Didn't have strawberry flavoring on hand so used almond. Was very dissapointed, it didn't turn out well at all. Perhaps I'll try agian with strawberry flavoring next time!

Candy Coated Pecans

These didn't look pretty at all when they came out. My brother thought they were dog biscuits! I wasn't expecting them to be so addictive! I used half the pecans but kept the coating the same (so essentially I doubled the coating) as suggested. Worked very well. We ate the whole batch in one afternoon.

Amazing Pecan Coffee Cake

This really IS amazing! I tried making it in loaf pans instead of a 9x13 pan. Wasn't a good idea. The body of the cake was too light and didn't hold up. It is an absolutely wonderful recipe. So yummy I felt guilty eating it for breakfast!

Apple and Raisin Sauce

I had to give up apple sauce (which I loved) when I was pregnant with my son. This sounded so good that I had to try it. It was wonderful, but since I wasn't using it for a glaze or filling and it was too sweet. I'll cut down the sugar next time...otherwise it would be really good on french toast as well. One other thing I changed was using dried cranberries which added in a great way! Thanks for the recipe! I can eat apple sauce again!

Pancake Stack with Syrup

These were wonderful! I usually don't like fluffy pancakes, but these hit the spot. I did change a few things though. I used only 2 1/2 tsp baking powder, added vanilla (as it seems many here did) and used honey instead of sugar. They were great. This one gets added to the recipe box! Happy eatings! (Oh, almost forgot, served them up with bananas and walnuts...yummy!)
