Smashed Cauliflower Side Dish

I used fresh cauliflower, and replaced the butter with a spoonful of cream cheese. Maybe I did not let it steam long enough, but I could not get it to the consistency of mashed potatoes. Overall though, I thought the end result was quite tasty. This coming from someone who really otherwise does not care for cauliflower.

Angel Hair Pasta with Garlic Shrimp and Broccoli

I followed the recipe exactly other than substituting regular cream for the heavy cream which I didn't have. Tasted good overall. My BF and I liked it, but I think it needed a little something. I ended up adding A LOT more hot sauce to my portion. Much better!

Cheesy Turnips and Carrots

I was searching for a recipe that will use up my turnips otherwise they would just go to waste. I'm glad I found this one! I've actually never tried to cook turnips before and this recipe turned out great! Really, it's smothered in cheesy sauce... who wouldn't like that? My boyfriend and I loved it. I followed the recipe exactly. It was a little runny, but it sat on the stove for about 10 minutes while my chicken was cooking, and it thickened up nicely. Thanks Sandra!

Braised Balsamic Chicken

Very good recipe. The only change I made was to add about a tablespoon of brown sugar. Tasted great served over brown rice with a salad on the side.

Salsa Chicken Rice Casserole

I made this last night for boyfriend and myself, and we both thought is turned out great. I did halve the recipe because I was only cooking for two. It's really convenient that you can now buy the condensed cream of mushroom soup and the cream of chicken soup combined in one can! Makes it easier and less waste when you cut a recipe in half. Anyway, I sauteed the onion beforehand along with some minced garlic. I didn't use mild salsa though. I used a 7 oz can of Herdez Salsa Ranchera. Gave it quite a kick! I also didn't bother with the repeat layering. There was just one layer of each. Worth making again!

Country Green Beans

This recipe was very good. I sauteed the onion and garlic before adding the ham and green beans. I left out the water completely, but it turned out I really didn't need the excess liquid at all. I also left out the salt. The ham was salty enough on its own. The only negative was the amount of butter the recipe called for. I used the full amount stated, but next time I will cut that amount in half and then add a couple tablespoons of chicken broth or water.

Chicken Breasts with Lime Sauce

This recipe turn out very good. I did make a couple changes though. I used only 1 tablespoon of butter and substituted the rest for chicken broth which in turn made the sauce more watery than intended. The flavor was still good though. Maybe next time I will try to thicken it a bit with corn starch. I didn't have any chives so I omitted those. I could barely taste the dill so next time I will add a little more.

Delicious Chicken Casserole

Very good recipe! I only used one chicken breast because I was only cooking for two. Also, I realized while I was cooking that I forgot sour cream at the supermarket, so I substituted a couple tablespoons of onion and chive cream cheese which thickened up the soup mixture nicely. I mixed in a handful of chopped carrots and broccoli and omitted the butter. You really don't need it. I toasted the cracker crumbs for a couple minutes under the broiler before serving. The title doesn't lie! It was delicious!

Best Ever Sausage with Peppers, Onions, and Beer!

Very good recipe! Both myself and my boyfriend enjoyed it! I was only cooking for two so I halved the recipe, and I still have leftovers for lunch tomorrow. I completely forgot the garlic but we did not miss it. I used dried oregano because I did not have fresh. I did not have tomato paste, but I used about a cup and a half of tomato sauce thickened with corn starch, and it worked out just fine. The beer I used was Redhook ESB... added excellent flavor! I will make this again! Thanks Robert!

Ham and Cheese Bowties

Yummy recipe! They only things I changed were instead of only Colby cheese I used a combination of Colby, sharp cheddar, and provolone cheese mixture. I also added some chopped onion in addition to the garlic. I served this on a bed of spinach along with some sauteed carrots and green beans.

Quick and Easy Brownies

I think this brownie recipe turned out excellent! I made a batch, brought it in to work the next day, and it was a big hit! Like some other previous reviewers, I only added a cup of flour. I baked them in an 9x13 pan but was a little worried when they started to rise and almost overflow. They turned out OK in the end though. I added an extra 10 minutes to the time... still a little gooey... but that's how I like them! When I took them out of the oven they ended up falling. I don't know if that was what was supposed to happen, but the end result was to my liking! A gooey... but not too gooey chewy and moist brownie!

These cookies were yummy! They were very moist and soft. I brought them to work and everybody loved them. I used yellow cake mix with sprinkles and they looked very festive.

Classic Macaroni Salad

I found this recipe to be WAY too sweet and it called for ALOT of onions. I tasted it a few hours after I made it and all those onions practically burned my mouth... and I really do like onions. I wouldn't make this again, because I think it was inedible.
