Italian Wedding Cake

I made this for my Brother in Law's surprise birthday to rave reviews. One gentleman told me "This may have been the best cake I have ever eaten". I tripled the recipe made it in 2 14" square pans. The changes that I made were using 2 large cans of crushed drained pineapple. I cut the amount of pecans in half in the batter. Left them out of the frosting and coated the outside wall of the cake in crushed pecans. I decreased the sugar by one half of a cup. I also added a package of dream whip to the batter. It really was very moist and delicious. I may use this recipe for my friends upcoming fall wedding cake!

Cuban Ropa Vieja

My husband asks for this for his birthday dinner every year. I made it with chuck roast...more flavorful and more tender. I served it w/ black beans and rice. Delish!

Shortbread Cookies IV

This is a delicious melt in your mouth shortbread cookie. I mixed them up in my Kitchenaid mixer. I uploaded a photo. We are getting ready to dip the ends in Dove milk chocolate! I did lower the oven setting to 325 degrees and baked for 25-30 minutes because of cutting them out as opposed to baking like a bar cookie as recommended in the recipe. You won't be disappointed.... YUM!!

Slow Cooker Chicken and Dumplings

I was skeptical about this recipe but Oh My Goodness!!! Bliss! I needed to make something for company but didn't want to spend all day in the kitchen. The only changes I made were that I added a pinch of rosemary, 1/2 c diced celery, 1/2 c of diced carrots for color and used 2 cans of chicken broth instead of water. I also increased the amount of biscuits to 3 cans as there were 5 large chicken breasts which I cut in half. ( I do have a large slow cooker) The chicken turned out very tender. I put the (removable) covered slow cooker pot in a preheated oven for 20 minutes prior to serving and the top of the dumplings browned beautifully. I should have taken a photo but alas.... so next time. I had to send this recipe to my guests at their request today. You won't be disappointed! A great easy yummy recipe...

Chocolate Cavity Maker Cake

Made it for My sister's birthday yesterday as well as a white chocolate cavitymaker cake.... Both were a big hit. It was about 50/50 on the tally. The vanilla cavity maker I added Praline liquor and white chocolate chips. I served them with whipped cream and raspberries....Yum!

Cheesy Ham and Hash Brown Casserole

Made this for our Easter church social. I doubled the recipe and added a sauteed chopped onion. There was a lot of the other dishes left over but not a bite of the Casserole. I heard one lady say that it was the best thing on the table. ( I didn't get any) I'm rating it on performance :^).

Ice Cream Cone Treats

Made these to be sold at a concession stand. I followed other peoples advice and baked the cupcakes separately. The other thing I did to avoid the complaint of soggy cones was to melt left over easter chocolate and line each cone with it and let harden before putting the cupcakes in the cones.... It worked beautifully.

Easy Slow Cooker French Dip

I have made this several times and it is great! It is a perfect recipe to make if you are having company. Just have your bread ready. We like ciabatta rolls. I butter and then sprinkle with garlic powder, toast in the oven for 5-6 minutes then add the meat and the provalone on the bun , pop back in the oven for 3 minutes and serve with the dip! Oh... if you have an electric knife it makes cutting the meat easier to slice thin. USE A DARK BEER! Yummy!

Big Soft Ginger Cookies

I make lots and lots of Christmas cookies... I decorate everything pretty intracately. I made these as written and my husband said... "Just keep making these! They are delicious!" Made another batch (tripled) in my Kitchenaid mixer. Sent off to family and friends and got RAVE reviews...Thanks for the great recipe AMY!

Ciabatta Bread

My husband loves ciabatta rolls for making sandwiches. We usually buy them at BJ's. Thought I would try my hand at this recipe because in the reviews 2 important words kept coming up. 1. Delicious 2. Easy. I doubled the recipe and made it in my kitchenaid mixer and followed the directions exactly exept for the dimpling of the bread... After I got it in the oven I looked up dimpling and it said to make dimples by making indentions with your fingers... Well I apparently "docked" the bread.... making holes with a fork... Nonetheless, it came out very nicely! Tasty!! Easy!! Husband gave it five stars and he would definitely let me know if it wasn't up to snuff. Thanks Marina for the great recipe... :) Will make again for sure! UPDATE! ok now I have made almost every ciabatta bread recipe that I have found at all interesting. I keep coming back to this one. My husband also likes this one the best. I usually add a little rosemary that I have growing outside... This bread is great for dipping too!

Tiramisu Layer Cake

I've made this twice now and have been asked by my daughter to make this for her birthday. She's pretty picky so I will give this 5 stars on that request alone! Really though... Yummy moist cake. Highly recommend!!
