Chicken Pot Pie IX

This made a delicious and easy pot pie for dinner! I used leftover rotisserie chicken and more veggies than called for, but otherwise all was the same. I might look into adding a little more seasoning next time, but that's just a personal preference. I'll definitely make this again!

Roasted Garlic Cauliflower

Yum!!! I love roasted cauliflower, and the garlic addition was awesome. I tossed my cauliflower pieces into a corningware, added the olive oil and seasonings and tossed it together in there before baking. Less dishes. :) My oven temp was lower based on the other food cooking so I just cooked it a little longer. My kids and husband gobbled it up so it's definitely a keeper!

Cheese Fondue

Mini Meatloaves

I agree - easy and quick! I wanted a dinner I could make quickly and then leave for awhile to cook while I got some other things done, so I tried this. I was hurrying, so I just went with the full recipe as is and it was GREAT!! I probably wouldn't use as much ketchup/brown sugar next time, but that's just me. My kids actually ate it (who usually don't care for much meat) and once they tried it, actually liked it. :) I also used ground turkey because we rarely do beef. Thanks for the great recipe!

Strawberry Pie II

I made this pie after finding the recipe because I didn't have jello to make my usual strawberry pie. It was good, but not quite as tasty as my other recipe. My children absolutely loved it, though, and even licked their plates clean to get the crumbs. :)

Quick and Easy Alfredo Sauce

Yummy! And definitely super easy, which was the best part. I'll certainly make it again! I used skim milk and light cream cheese, and next time I might try dropping some of the butter to lighten things up a bit more, but it was definitely easy and tasty.

Mongolian Beef

This was yummy! I had some red swiss chard from our CSA box to use and I was looking for a recipe that would work well for our family - this was great! I didn't use the hot chili oil or the red pepper flakes because I was suiting tastes to a 1 and 3 year old, and I actually used beef broth instead of the chicken stock because it was expiring soon :) We'll definitely make this again! I also think it would be a pretty easy recipe to prep the meat ahead of time when it goes on sale and keep it frozen for later use. Thanks!

Mom's Zucchini Bread

This was a great recipe! I followed others suggestions to make it healthier - half whole wheat flour, half applesauce, bananas and egg whites instead of whole eggs, just a cup of sugar - and it turned out great! I used 3 zucchinis and it was perfect, plus my toddler and preschool are gobbling it down. :) YUM! Thanks!

Irresistible Irish Soda Bread

Yum!! This recipe is SO awesomely easy that it was wonderful to make with my 1 and 3 year olds for St Patrick's Day. It smells so great in the oven that our house still smells wonderfu. We weren't patient enough to wait for awhile with it wrapped up for the flavor to increase, but I'm excited to have some more tomorrow and try it that way. :) We did add a cup of raisins when we made it, but no other changes and it turned out great.

Three Cheese Baked Pasta

Great recipe, thank you!! I use garlic-flavored spaghetti sauce (Wegman's brand) and it made it really flavorful and yummy! I also probably had a teeny bit more cheese because I just used the whole packages, which were 8 ounces each. Definitely a keeper! Oh, and it also freezes well!!

Land of Nod Cinnamon Buns

We've had this every Christmas morning for the past 3 years and LOVE it! I love that it's egg-free, and can be made to taste (and health ;) ) so it's a good treat for young kids. It's so so easy, too - I throw it together quickly the night before, stick it in the oven before the kids open presents, and it's done when they are - perfect!! Thanks so much for a great recipe!

Delicious Ham and Potato Soup

This is a great recipe! I didn't measure much - I used a bag of potatoes, a few stalks of celery, a cut-up ham steak, and some onion and boiled that in chicken broth rather than the water + bouillon, and didn't need any salt or pepper. I added about 3/4 cup shredded cheddar cheese to the white sauce and a bunch of cooked broccoli to the veggies and ham. I also sprinkled cheese on top to assist the picky-soup eaters in the family, who did enjoy it, even the 2 year old with her "Mash T'atoe Soup." :) Thanks so much! We'll definitely make this again!!

Country Quiche

I love this recipe so much because it's so easy and versatile! I usually make it with a refrigerated pie crust from the grocery store, and also made it today with a frozen pie crust and it was also great. I've used bacon and ham, almost always left over from breakfast or dinners, with pretty much any type of cheeses, and I add in veggies like broccoli or spinach (tonight I used leftover veggies from last night - broccoli, cauliflower, and carrots all chopped up tiny and it was yummy!)... it's a great way to hide in a few extra veggies for kids. Thanks for the great recipe - it's become an easy staple in our house!

Chicken Pot Pie I

This was a good base recipe. I needed the idea to do it "my" way... I used frozen mixed veggies (I microwaved them a bit first, but not all the way), some fresh spinach that I quickly steamed first, and added a scoop of sour cream. I also put in some flavor from dry minced onion, garlic powder, parsely, and thyme. I also used refrigerated pie crust dough from the grocery store for less work. Anyway, as my husband said, I used less chicken and loaded all the veggies I could inside like normal, and it was yummy! We'll definitely make this again, and look forward to trying it different ways.

Meringue Cookies

Great recipe! I also had to cook mine a little longer (35ish minutes), but maybe I made them too large? I love meringue cookie recipes that allow me to make more than one batch in a night rather than having to wait a long time in the oven, so I was pleased with this one! :o)

Quick Yeast Rolls

These rolls are so EASY if you follow the directions exactly! I didn't need to add anything extra... the dough is a little runny (more like a batter), but it's going in a muffin pan so it totally makes sense. They turned out great and we'll definitely make them again. The only "issue" I had is that because they bake in a muffin pan, they look like muffins, but taste like rolls, so it plays with your mind for a second. :o) I may try them in a loaf pan or something else, but for the extreme ease of this recipe, a little mind game is totally worth it.
