Easy Valentine Sandwich Cookies

As far as cookies go, I prefer drop cookies (much easier!) but for quick cutouts, these worked rather well. The frosting / sandwiching took a while for me, but that's my own doing, not the recipe's fault. I second the warning to put space between the cookies if you make them 1/4" thick, because they will poof up and out a bit and will stick together. Strong recommendation is to place dough between parchment paper for rolling, and then it's easy to simply cut out the shapes, pull off the excess, and move the parchment paper onto the cookie sheet.

German Cut-Out Cookies

Whipped these up in no time! The brown sugar made them much tastier and chewier than a sugar cookie made with white sugar. Like others, I rolled the dough between parchment paper to make it easier on myself... cut the cookies there and simply lifted the parchment paper onto the cookie sheet. Easier cleanup, and no mushed shapes! The cookies held their shapes well during cooking, even the ones I'd used the melon baller on. I highly recommend this recipe.

Chococonut Chip Cookies

I hate coconut. Hate it with a passion. But someone at work asked me to make a cookie with coconut in it. I picked this recipe, and I think I am the one who ate the most of them! Easy and delicious.

Cashew Caramel Bars

They look like a gooey mess, but they are so delicious that people asked me for the recipe. This is easily doubled and baked in a 9x13 pan.

Cookie Press Shortbread

"Quick"?? No. It took 45 minutes to get the dough together, and then the time to press and cook the cookies. I nearly burned out my mixer trying to get this to blend through. The resulting cookies looked like they would be good, but they were very dry and bland.

Sugar Free Rugelach

My diabetic husband thought they were good and said he'd eat them again if I made them again. "And please make them again." The pastry part whipped together quickly, the rolling / spreading part took a bit, and I could only get 8 slices rather than the 16 suggested, since I knew I'd just make a horrid mess if I tried to roll smaller crescents. Maybe someone with more skill could manage... All told, these were a good choice. My kids enjoyed them too, surprisingly.

Maybe others will have a better result. For me, I found it difficult to follow the directions, particularly after doubling the recipe, but the text of the recipe didn't likewise adjust. The frosting never did come out right, even after 45 minutes of fidgiting with it. I'd be interested in finding out how others have fared with this.

Cinnamon Cookies II

Quick. Easy. Very easy. Piece of cake to do, and the cookies are so delicious, I was tempted to make a whole extra batch because I just know these will not stay long. The cinnamon taste lingers delightfully. Hmmm... maybe dip them in Cool Whip? I think I'll try it...

Hot Bean Dip

My brother-in-law said, "gee, this is horrible. You shouldn't let anyone else eat it. Instead, give it all to me!" But in the time it took to say that, all the kids had eaten it up. I'll make this recipe again and again... Quick, easy, delicious.

Quick Peanut Butter Cookies

Very worthwhile as a quick "whoops, need cookies!" recipe. Whipped it up in no time flat. Reading the reviews, I lowered the temp to 350 and they came out nice without burning. I used crunchy peanut butter, not because of cooking flair but because it was all I had... I'd do it again, it gives a nice texture to the cookie.

Hermit Bar Cookies

Those who like gingerbread will like these cookies. Some of my coworkers said they were "old lady cookies" as in, they are served at grandparents' houses. But, they'll be served here at my house quite often!

Snickerdoodles I

NOTE: If you double the recipe, the instructions WON'T reflect that change -- it'll still say "mix in 1 1/2 cups..." which wrecked my first (double) batch. Once you make them properly, though, they are delicious and wonderful.

Reese's® Chewy Chocolate Cookie

These are incredible. My co-workers couldn't keep their hands off of them... gone within a day, and normally 2 batches of cookies last at least a week. Quick and simple to whip together and the batter itself is delicious. ;)

Lemon Sugar Tea Cookies

delightful without being overwhelming. Might try orange or peppermint extract instead next time. The balls do flatten out quite a bit .. leave plenty of space between them. Great for a "higher class" meeting or a spring iced tea party.

Chocolate Orange Tea Drops

I'm not sold on these guys. They are very orangy -- not just a subtle hint at all. I keep thinking they'll taste like chocolate chip cookies, but not at all. The cream cheese taste is strong and the orange even stronger. The chocolate flavor disappears. I'm sure some will love them, but I was looking for something else, and I don't believe they'll have a popular appeal. --- And despite my not liking them, they were DEVOURED at work, and people asked me to make them again.
