Easy Lima Beans

Reviewed: Jul. 12, 2012
Wonderful. I used dry beans. I did the quick soak method to soak the beans and then I cooked them until they were soft with onion and garlic. once soft i added better than boulin and some pepper. and cooked them till they were thick enough to eat. If I cook a while bag of beans before I add the chicken stock I portion out the beans for the freezer and then cook what i want for that night with the seasoning.

Easy Chicken Gyro

Reviewed: Jul. 12, 2012
Absolutly wonderful. I make my own Tzatziki sauce, Hummus, and pita bread when I make greek meals, usually Keftethes (greek Meatballs). I Tried this and it was just as good as Greek meatballs but cheaper and easier. I like Tzatziki II from this site, although I have realized I like sourcream more than yogurt and it is cheaper. I also just squize the water out of the cucumber using a paper towel but dont mess with getting the water out of the yogurt or sourcream and I like "real Hummus" from this site. I cant remember where I found my recipe for keftethes but it is a mixture of a pound of lamb, 1/2 pound ground beef, mint, bread crumbs, egg, and garlic. and then I lightly fry them in a pan. I tried googling but all recipes add something I do not use. As for the chicken I used the marinade but did not broil. I used a frying pan and put in alittle oil on medium high (my oven goes from 1-8 and High I was on 8) when the pan is hot i dump in the chicken I then let it brown on each sides and cook. it getting brown is what creates the flavor. Sometimes when I dont have time to make pita bread i will buy flat bread and heat it in a pan for 15 to 20 seconds a side with alittle oil. and for added flavor I like to grill red onions in a pan with alittle butter or oil. and Don't forget to top with Feta!

Cream Cheese Jalapeno Hamburgers

Reviewed: Apr. 25, 2012
We have made these multiple times and always come back to this recipe when we make burgers. I use one jalopeno, a pound a burger and about 1/4 cream cheese block. I melt the cream cheese in the microwave to get it plyable. I season my burger with lawrys seasoning salt and balck pepper. then I make very very thing pattys then i spoon some mixture in the middle and put another thin patty on top and bind the edges. I do like them with a slice of swiss or cheddar on top but it is fine without it. I have made these on the Forman, the grill and in a frying pan they have never turned out bad. although the forman and the grill are much easier. also those little 1 lb meat logs that you can buy those work the best since they are so sticky to begin with.

Slow Cooker Sweet and Sour Kielbasa

Reviewed: Apr. 23, 2012
I did everything to recipe except i halved the sauce and kept the sausage amont the same and cooked the sausage with the onions. We ended up realizing it tasted better after simmering for 20 min rather than after being in the crock pot for 5 hours. Wish we would have ate it for lunch rather than dinner. But still even then, I would probally not make it again, it was just ok to our taste buds.

Chicken Mexicala

Reviewed: Apr. 19, 2012
I cooked my chicken with the onions and the green chiles. I added some taco seasonings such as Cumin while cooking the chicken. I didnt have evapoated milk so subbed it for powdered milk with only 40% of the water added to it. (since evaporated milk is milk with 60% of the water evaporated) Other than that, I layered in it a round casserole dish and it turned out great. Oh, and I did half corn half flour tortilla since I am a corn fan and my husband is a flour fan but we coudnt tell the difference in the end. i had them ripped up in bite size pieces. Next time I might try adding another can of green chiles or adding green enchilada sauce. I made homemade quacamole with black beans and corn as a side dish. I am eating leftovers right now and it still tastes great.

These were pretty good, although alittle bit to dry. I made the recipe as written and used Chocolate Chips as my add in. I think next time I will use maybe only a cup of oats.

Ann's Dirty Rice

Reviewed: Dec. 1, 2011
This was a good simple meal and I needed to use up a bunch of peppers. I used Yellow pepper along with the green and red. I Only gave it four stars becuase I made it as written and I think It would have been much better if I made the rice seperate and then added it to the cooked meat and peppers. I think it lost alot of its natural flavor and made it too soupy to do it all in one dish.

Golden Pork Chops

Reviewed: Oct. 20, 2011
This is one of my favorite meals. I always make it with rice and some vegtable on the side like green beans. The only difference is I put it all in a skillet and let it simmer for a hour or so. Usually I brown the meat first with a flour bread crumb mixture also just to get that yummy crust.
