Fried Black-Eye Peas

grew up mighty poor, meat was scarce on our table. my dad used to take the peas, mash them up and put all the seasonings you would use to make sausage, sometimes including some red pepper flakes, added some flour i think, anyway made them into patties and fried them up in bacon grease, He called it pea sausage,,you would never guess it wasn't sausage. My dad has been gone many years, I still make them sometime

Braised Collard Greens

this recipe is wonderful..especcially since greens are sooo healthy for mother (born and bred arkie)always had jar of hot peppers on the table to use the juice for the greens. also one little tip. if you cook just plain greens when in a hurry...just a pinch of nutmeg while cooking will take away any bitter taste and you can never tell it has nutmeg in them..i never cook greens without a little red pepper flakes either.

Vanilla Ice Cream I

10 stars, i do not whip the cream. made this 3 times now. first time used vanilla and added crushed fresh raspberries and chunked hershey bar after churning. 2nd time used raspberry extract/crushed raspberries and the chocolate, this time using vanilla, crushed blackberries and chunked chocolate. raves and request for more more more everytime i make it

Red Velvet Cake I

I was making this cake 50 years ago...the original recipe for the frosting calls for using crisco, not butter or is a very touchy recipe but if you can get it right it is to die for...tastes just like whipped first I had problems with it curddeling, but finally mastered it..

Grilled Bacon Jalapeno Wraps

wanna change it up a little? add a date, cut in half on top of the cream cheese..wrap your bacon on it and then...smoke it..yummmmmmy. You can also microwave the bacon till half done and still flexible, then wrap..saves grease catching on fire on the bbq

Orange Pecan French Toast

made this for sunday breakfast yesterday only thing I changed, was to substitute 1/4 cup of the orange juice with grand marnier..other wise followed the recipe exaxtly. omg to die for..

Orange Glazed Carrots

I love this site, almost everything I cook now comes from here. luv it..but today I saw this recipe and thought why take a perfectly healthy vegetable and do this to it..I am sure it is extremely yummy, but by all means lets continue to add sugar and fat to it so our children will not think it is a veggie and lap it all up..

WOW! Finally found my lost Mississippi Eggnog recipe, here it is..Thanks. The only difference is instead of granulated sugar it uses powdered sugar so it mixes much easier..Once you try this recipe you will never use another.

Chicken Puffs

great recipe..I did add just a dot of red pepper flakes to the mixture for flavor. Also used cream of chicken soup with a tad of red pepper flakes in it as a gravy. served for dinner..add the gravy as you eat them, leftovers are good snacks without the gravy..yum yum

I tried another recipe which called for 3 eggs and then this one. Both turned about the same...a little too brown on the outside and not done enough on the inside...this recipe turned out better shaped popovers...but can't figure out why they aren't done in the what am I doing wrong.

Balsamic Roasted Red Potatoes

Wunnerful, just wunnerful..I served this with steamed green beans and pork chops that I floured,browned and then added onions and a glass of orange juice with a shot of brandy in it, then simmered in the skillet till tender. The potatoes were out of this world. I and my guests felt the meal was truly gormet. One tip for those that felt it was too vinegary, you really must use a truly aged basalmic vinegar which is much sweeter than less aged ones.
