Slow-Cooker Chicken Tortilla Soup
I just got a slow cooker and this was the first recipe I tried with it; I have to say it was very yummy! However, after halving the recipe (it's just my roomate and I) I made some changes since I didn't have all the ingredients on hand- Like other reviews suggested I threw in the chicken still frozen and shredded it about an hour before serving, I used 2 fresh tomatoes rather than canned, 1/3 Cup of Spicy Salsa to replace the enchilada sauce, instead of chicken broth I used tomato soup, added a 1/4 teaspoon of cayenne pepper, added 1/2 Cup of black beans and topped it off with sliced avacado,and served it with cornbread...mmmm yummy!

Playgroup Granola Bars
I've made these twice now and the second time I made them I tweaked the recipe a bit and came up with a great granola bar! Instead of the wheat germ I used natural wheat bran, added 2 tablespoons of flax seed, whole wheat flour instead of the all purpose, and instead of the oil I used 1/4 cup of organic crunchy peanut butter and 1/4 mashed banana. I also tossed in some craisins instead of raisins and some mini chocolate chips...delicious!

Low-Fat Blueberry Bran Muffins
This recipe is fantastic! It has become a weekly recipe! I use all whole wheat flour, a little bit of cinnamon, a teaspoon of flaxseed, and I throw in whatever fruit I have on hand-right now the ones in the oven have 1 banana mashed, a handful of dried cranberries, raisins, blackberries, blueberries, and dried prunes (I went a little overboard!)...but they always turn out great! It's a very versitile recipe-Thanks soo much for sharing!
