Baked Ziti Casserole

Oh dear - this needs help. Easy to make, but needs some flavor enhancing. I recommend adding at least 50% more sauce and as much as 50% more ricotta. I would also stir into the ricotta, a generous dose of dried oregano and basil and other favorite Italian spices. I added browned Italian sausage to mine.

Mimi's Smoked Salmon Chowder

Easy and elegant, although I find it's easy to over-salt this dish. It can vary some in taste each time I make it but it's always good. P.S. If you're looking for a partner dish to serve to guests, try pairing it quiche and crusty bread.

Almond Crusted Pork with Apple-Rosemary Sauce

This is hands-down the best main entree I have ever made. It is my new standard for serving to guests. Moist, flavorful and elegant, but easy to make and hard to get wrong.

Four Seasons Enchiladas

Everyone loved this very simple dish. I added thinly sliced fresh spinach to the turkey mix, as well as 1/4 tsp of ground coriander. There are lots of fun extras you can work into this dish.

Wild Rice Harvest Casserole

Excellent - what I call - "Brady Bunch" casserole. Very easy to make and full of flavor. Due to what I had on my shelf, I used ground turkey rather than chicken and omitted the cashews. Still great.

Wicked Good Dip

This is a fantastic twist on the average party dip. Good with stiff crackers (like Wheat Thins), as well as veges. Here are the variations I use. (This may solve the saltiness another reviewer mentioned.) * Half the recipe. * Add sour cream (about 1/4 to 1/3 C if you're halfing the recipe). * Substitute 1/4 C of chopped green ONION for the green olive. I blended the cream cheese, sour cream and shredded cheese in a food processor first. Then stirred in the other ingredients by hand. Spread in a shallow dish. Garnished with a sprinkle of paprika and a tiny mound of chopped black olives in the middle.
