Coconut Fish Curry
Very bland, no depth of flavor. As one other person did, I added double the oil to make the paste. Very watery, so I thickened slightly. Won't rush back to this recipe

Roasted Vegetables
Great recipe, I also omitted squash, and used baby carrots. Sometimes I add parsnip slices, but the most colorful change I make is to use multi-color fingerling pototoes, quartered lengthwise. So pretty. I also add brussel sprouts sometimes. So yummy!( When I know I will be short on time, I prepare the veggies, and soak them in a lg zip lock bag covered with water, kept in fridge, drain just before making the recipe.)

Cornish Game Hens with Garlic and Rosemary
This is amazing, and quite simple..The only change I made was to use roasted garlic infused olive oil. Every time I serve it, wonderful comments. It goes great with roasted root veggies with rosemary and thyme.
