I love this recipe. I made mini loaves for Christmas gifts - they looked wonderful. I've made several loaves for ourselves and it always turns out yummy.

BLT Bacon Bowls

I got rave reviews of this. I filled with romaine lettuce and grape tomatoes tossed with blue cheese dressing. I tested out making smaller ones using my small pastry/candy sized baking tin (normally I use it for peanut butter cups) and although they didn't make as pronounced of a cup shape, they worked really well and turned into bite sized BLT bowls! The large ones were difficult to share as well as made for a lot of bacon for one person to eat during a party (only appetizers were set out) and for 15 strips of bacon I only got 5 big cups. I got several little cups from just a few slices so I'll work on perfecting the smaller size next time around. I'm guessing if I wrap around (rather than weave) I could manage smaller cups.

Quick Chicken Divan

I made this last night from a very similar recipe that had a few additions that, after eating it, I can't imagine it without (meaning - it would be bland). Suggestions: add 1 Tbs lemon juice, 1 tsp curry powder, and breadcrumbs mixed with the cheese for the topping. A very filling casserole, although I think I blanched the broccoli too long because it was mushier than I had expected it to be.

Streusel Topped Blueberry Muffins

Excellent recipe! I've never made blueberry muffins from scratch, but this is going in my permanent arsenal. It was a huge hit with friends. We had a small gathering and the rest were sent home with people!

I don't know why I never tried roasting beet before. This was soooooooooo good! I thought the beet greens were a tad bitter, but I like that - I just didn't expect it.

Pepperoncini Beef

This is really good! And for those who fear spiciness, this isn't spicy at all. More like just tart. It's a nice change up from a standard BBQ sauce roast beef sammich or au jus.

Dilly-Of-A-Baked Potato Salad

Delish! My sweetie and loved this. We made it with the "limehouse chicken" and it was a very delicious dinner. I started them at the same time and it took a total of 45 minutes to make it all - will try again.

Slow Cooker Adobo Chicken

I've made chicken adobo lots of times on the stove so I modified a bit to match the taste I'm used to. I used rice vinegar instead of distilled, added a chili pepper for spice, and used 50/50 medium sweet soy sauce and regular soy sauce with just a little brown sugar. I've always used this combo and a co-worker who's filipino says it tastes just like "home" to him. The only thing I didn't like was the shredded chicken. I prefer the cut pieces of chicken from my original recipe so I'll probably make this in the slow cooker next time with just the onions then throw in a pot with chicken 20 minutes before eating. I was told that traditionally you take the onions and chicken out of the sauce, carmelize in a pan then put that on top of rice and pour the sauce over it. With the shredded chicken it didn't turn out as well so I'll stick to cutting it up instead. Otehr than that it was delicious.

Slow Cooker Chile Verde

This was excellent. I cut out one can of the green salsa and there's still lots of liquid. I didn't have any fresh lime on hand so I used bottled lime juice and it was tasty, but fresh would have been so much better! It definitely needed it to brighten the taste. I didn't think it was too spicy at all and will use more jalapenos next time. This made an absolutely delish lunch for work - I love getting excited about my lunch breaks.

Limehouse Chicken

We didn't have the mint and I didn't use the brown sugar. It still turned out incredibly tender and delicious. My sweetie LOVED it and it was so easy to make. I didn't use a baking dish - I browned the chicken in skillet then put the skillet in the oven - turned out beautifully.

French Dip Sandwiches

We had a 3 lb roast to I added a little less soy sauce, but used the same measurements for everything else and added 1 T of brown sugar, which I think rounded out the taste and gave the au jus some more dimension. It's delicious! We made this on Sunday and had the last of it for dinner last night. I sauteed some onions, added the rest of the shredded beef, spooned a little au jus over it, and added some chopped up pickled sweet peppers and hot peppers. Ate this mixture in a french bread hoagie with cheese. It was very similar to a philly cheese steak and tasted AMAZING!!! I highly recommend it.
