We had a 3 lb roast to I added a little less soy sauce, but used the same measurements for everything else and added 1 T of brown sugar, which I think rounded out the taste and gave the au jus some more dimension. It's delicious!
We made this on Sunday and had the last of it for dinner last night. I sauteed some onions, added the rest of the shredded beef, spooned a little au jus over it, and added some chopped up pickled sweet peppers and hot peppers. Ate this mixture in a french bread hoagie with cheese. It was very similar to a philly cheese steak and tasted AMAZING!!! I highly recommend it.
