Excellent recipe, a great and quick low-ingredient alternative to cookies when you want something fresh and fast. I've started adding dried cranberries or raisins to the bottom layer for some extra tang and chew, in particular when I don't have a "red" jam (raspberry, black currant...), as other jams (yellow plum, elderberry, pear...) i have tried have less flavour when they come out of the oven. Also roasted chopped nuts are yummy if there are no allergies in the eating crowd. Thanks for a great recipe!
