Warm Fruit Compote

Reviewed: Mar. 25, 2009
I made this the first time for a potluck for work. Everyone is still asking for the recipe. It would be so awesome over vanilla ice cream or add rum for some adult friends. A great cold weather desert. I like to call it HOT FRUIT.

This is one of the best dishes I have ever made. My in-laws absolutely loved it.I might have added more of the sauce while cooking. This was the first time I have ever cooked salmon and it was a complete success! I could go on and on and my mouth is watering right now

Turkey Carcass Soup

Reviewed: Nov. 25, 2011
Delish! Great recipe and easy to make the day after Thanksgiving. I had to adjust the seasoning a bit due to the huge turkey we had but turned it out wonderful and I'm going to make this from now on instead of going shopping on black Friday.

Black Friday Pie

Reviewed: Nov. 28, 2012
I tried this last night with Thanksgiving leftovers. I got raves. I followed one reviewers advice and switched the potatoes and the stuffing. I also added some leftover corn casserole. It worked well. This will be a stand by for next Thanksgivings leftovers also. Nice way to use them up.

Split Pea and Ham Soup I

Reviewed: Nov. 29, 2012
I was not a fan of Split Pea soup growing up. I thought I would try my own twist on it and it worked out. I added carrots, celery, and used half veggie broth half water as suggested by others. It all became a super smooth soup. No worries about it not tasting like pea soup with the other stuff.. It was done sooner than expected so next time I will take off the heat sooner and let it thicken. I made this for my husband who had been looking forward to this after thanksgiving recipe. I will try again and not cook as long.

Banana Apple Bread

Reviewed: Dec. 13, 2012
Had leftover apples and bananna's from thanksgiving and decided to try this. AMAZING!! My household loved it!! Next time I am going to try to add some shredded zucchini just to back in the fruits and veggies. Followed a review and baked without the foil and then at the end added it. It did have to bake a while but delish!! The topping is so yummy also!! Thanks for this recipe I will use many times I am sure.

15-Minute Herbed Chicken

Reviewed: Dec. 17, 2012
Great easy recipe!!! I thought it might be a little plain but I was wrong. We ate it with rice and a frozen veg. My husband asked to have it again the next week. Good thing I had extra ingredients to do it again. I tried the broth simmered rice. It was ok. Regulare rice was great also. Thanks for the recipe. I'm sure I will be making it again.

Glazed Dijon Carrots

Reviewed: Apr. 1, 2013
I made this for Easter dinner this year and it was yummie. I used regular carrots and just cut them to about the size of mini carrots. They worked just as well. Great new way to prepair carrots. Definately will use again in the future.

Grilled Salmon with Curried Peach Sauce

Reviewed: Aug. 27, 2013
Tried this for my husband who has a new found love of curry. I'm not really a fan but tried it anyways. We both loved it. I cooked it in the oven in a foil packet as advised in other reviews. Super easy and tasted delish. Now I have a quick run to recipe to use when my peaches are about to go bad. I would only try with fresh peaches as otherwise advised also. Served this with green beans and mashed potatoes. Definately will make again!

I made this for easter this year and they were delish!! The only thing I did differently is I roasted the carrots and the brussel sprouts instead of boiling them. I will definately make this again!

Rita's Sweet Holiday Baked Ham

Reviewed: Apr. 21, 2014
This ham was good! I did not use the bag. Instead I used a roaster and basted a lot. Love all the fruit juices. I marinated it overnight to ensure the juice went all the way through.
