Buddy's and Bubba's Homemade Dog Food

My dogs LOVE this. They have grain allergies so while waiting for my vet to order a new type of food to try, I decided to give this a whirl. It's a lot of food. I don't know who says this is cheaper than dry food--but they really really did love it. I have two dogs, siblings--a female that is 50lbs and a male that is 60lbs. I doubled this recipe and I gave them 3/4 c 2x a day. Calorically it was the same as the food they were eating (Blue Buffalo). Doubling this recipe gave me enough food for 2 dogs for 4 days. A few notes: I bought frozen chicken breasts. Less fat with no skin and the lean white meat was better for them than the dark meat--plus I didn't have to pick bones. I used 1 16 oz bag of frzn chopped spinach 1c of pumpkin instead of carrots 1 bag of steamfresh sugar snapped peas, chopped in food processor I did puree the kidney beans. Next time I will use lentils for economy. I SKIPPED THE GARLIC. IT'S NOT GOOD FOR DOGS. I may skip the oats next time--if these guys are allergic to all grains, I'll just add more rice. Otherwise, I highly recommend. They love it. I love feeding them food with no chemicals!

Mexican Rice I

This rice is good, but I made it with 3/4 c chicken broth and 3/4 c water. I had to add another c of water or so, and when I did I threw in a boullion cube. I can't see how this would have any flavor made with water. But it's good--our new side dish for tacos, etc.

Krista's Sticky Honey Garlic Wings

I was looking for a wing sauce to recreate the sauce of a popular chinese restaurant in my hometown--with some tweaking--I found it! I didn't make that many wings, only 10 whole wings, split with tips cut. I used 1 c water, not 2.5, I used 1 heaping TBSP of Splenda brown sugar blend, about 3 tbsp honey, about 1/3 c soy sauce, the same amount of garlic, which means if I were making all the wings that this recipe called for I would double the pressed/minced garlic. For the thickening agent, I use 3/4 c water and the full three tbsp of corn starch. These were delicious, definately a keeper.

French Onion Soup V

this is a good base--but I found it to be bland, as is. Maybe I didn't use the right onion--but I had to add some sugar, some kosher salt and also some worchesire sauce (several dashes) to give this dish some added depth and richness. I served in a bread bowl with melted mozz cheese. It was delicious after I tinkered with it.

Sauteed Sweet Plantains (Tajaditas Dulces de Platano)

WOW. These are good. I used VERY ripe fruit, and I cut them into quarters, and used a bit more sugar, as I had 3 plantains. They are fantastic, almost had a "candied" effect. You absolutely need to use the salt, in my opinion, to help with a "savory" effect and balances out the sweetness. I just sprinkiled a little kosher salt on them--if you are using iodized, you may want to reduce the salt a bit. Truly amazing.

Whole Wheat Zucchini Bread

I followed the recipe, I did add more zucchini. These were a bit dry. Even with just the one cup of whole wheat flour, I think some applesauce would help these, along with the oil. Whole wheat pastry flour would be beneficial, as well. I cut recipe in half and then baked into muffins.

Rigatoni with Eggplant, Mushrooms and Goat Cheese

This was very good. It's even better the next day. May I suggest making the sauce the day before to allow the sauce to marry? I added Zucchini and used whole wheat penne. Added basil and parsely, used dried ground thyme, and more crushed red pepper because we like heat. Rather than chicken stock, I used red wine, and used Napa Valley kalamata olives marinated in wine. The briny olives really popped in this dish. I only only used 4oz of the goat cheese. A full 8 would have been entirely too much.

Cream Cheese Jalapeno Hamburgers

These are very good, albeit messy. I think I made the burgers too big and they came apart, and when they were done grilling it was like a doublestack with filling in between. This would also make for a great spread to just put on the bun after the seasoned burger is done. I'll make it again that way.

Ham Potato Puffs

This is just ok. I don't know if I used biscuits that were too large or what. (I used grands). They just didn't have a lot of flavor. I think it would be interesting to use this recipe and replace the potatoes with eggs and make mini quiches. I would use smaller biscuits. But I would definately season these up, the 1/4 tsp of garlic isn't enough.

Steve's Famous Garlic Home Fries

These were decent. Used 1/2 butter and 1/2 EVOO. It was a bit much, maybe next time used 1/2 butter and 1/4 EVOO. I also added a bit more salt (I used Kosher), and a bit more paprika. I thought they were good, and my Easter brunch guests really enjoyed them. (No leftovers) I will make them again.

Restaurant-Style Buffalo Chicken Wings

I followed the recipe exactly, except I baked them for about 50 minutes. I coated the pan with pam, put the floured wings on that pan, refridgerated them for 90 min. Baked at 375 for 15 min, then 350 for 20 min. Coated wings w Pam (both sides), flipped them over, and baked at 400 for about 15 min. They were delicious and crispy. Will be making these again. YUM

Fish Fillets Italiano

This was very good. I used the diced tomatoes that were fire roasted with garlic (Hunts) and I used two cans and one cup of wine instead of 1/2 c. I also used dried parsley and some black pepper. It went over well.

Asian Lettuce Wraps

Made this for some friends coming over. They were great, everyone loved them. They are a little messy, so be prepared for that. I used ground Turkey rather than beef and it was fabulous, no change in the taste/texture what so ever. Also omitted water chestnuts b/c we had someone over that didn't like them. I used frozen vegetables (onion, green, red and orange peppers) and fresh ginger and green onion. I had a hard time finding the pickled ginger. The fresh ginger worked extremely well. Will definately make these again.

Chocolate Chip Coffee Cake

This is a good coffee cake. I read some reviews that said the cake was a bit dry so I added 1/2 c unsweetened applesauce. I made it in a bundt pan as well, and it took 10 extra minutes to bake. I, unlike the other reviewer who made it in a bundt pan, did not feel the need to double the recipe, as the cake rose well.

Balsamic Roasted Red Potatoes

These were very good. I did not have green onions so I used Shallots and they worked very well. There was not a wedge left at the end of dinner. I will say that the three steps seemed like a bit much especially considering there are easier one step recipes that are still very good. But all in all, these were delicious and went over well.

Tex-Mex Pork

This is very good, very lean, very easy. Perfect to serve for some family members who are diabetic! I will definately be serving again. I did add 1 whole can of tomato sauce and I served taco style with low carb whole wheat wraps, low fat sour cream, and shredded cheese. Yum. Maybe next time I will add some liquid smoke just to give it a little more of a smoky flavor.
