Chocolate Chip Banana Muffins
I am not a fan of Banana Chip muffins, so I have tried many hoping to find one I like. This one is very good. I substituted mocha yogurt for plain, since I didn't have plain. I used 1/2 cup applesauce for half the oil. Also used milk chocolate chips. These are light and fluffy. Delicious!!

Scalloped Potatoes and Onions
I made this recipe exactly as stated (don't like to change a recipe the first time) It was as good as everyone claimed it to be. It does tend to have a more chicken-y flavour because of the broth, which we all enjoyed. Definitely will be my go-to recipe for scalloped potatoes. Give it a try if there is lactose intolerance in your family.

Taco Casserole
Very tasty. The only change I made was subbing the diced tomatoes with salsa. Added the chips the last 5 minutes but may add them sooner next time. Definitely will make again.
