Halloween Popcorn Pumpkins

TIP: put popcorn in a brown paper lunch bag (no oil necessary) and microwave it. This is healthier than the chemical kind you buy. It is also easier than shaking a pan on the stove. Once popped, Tear a small hole in one corner of the brown bag and shake your popcorn over the trash can to get the unpopped kernels to fall out.

Tofu Sandwich Spread

VERY GOOD. Doesn't smell like sulfur like real egg salad, so you can take this to work. But I add some curry for yellow coloring (makes it look like egg salad) and a bit of red pepper for extra flavor.

Coconut Pie

VERY GOOD. not like the eggy pudding type coconut pies from the store. THis was a cross between a pecan pie consistencywise and a coconut pie. I did change a few things: subbed 1 cup coconut milk for milk, toasted my coconut first and left out the vanilla. I also used a jiffy pie crust mix. Other than that the only change I would make is to cut a bit down on the sugar.

White Chocolate Fruit Tart

UPDATE: I made this a 2nd time. The first time it was very good but the crust didn't get brown and it was too thick. 2nd time I swapped it with this website's Down Under Lemon Tart Crust and it WAS SO MUCH BETTER. It made 2 nine inch tarts (if I pressed the crust thin) . So, I divided the white chocolate filling between the 2 tarts and the proportions of filling to crusts were PERFECT~ not too much crust (as before) and just the right amount of filling. Topped with Fresh Pineapple, Strawberries and Blueberries ... nixed the kiwi and mandarin oranges which weren't that tasty last time.... PLEASE TRY IT WITH THE DOWN UNDER LEMON TART CRUST!....if you want a light flaky, crispy buttery crust that actually browns.

Aunt Janet's Pumpkin Dump Cake

YUMMY. But... I didn't follow the recipe exactly due to my father's heart disease. I cut out the butter and reduced the four eggs to one egg. I used about 1/2 the evap. milk. Skipped the sugar entirely, used half a box of cake mix and it was so good. Topped with a scant dusting of powdered sugar.

Orange Baked Acorn Squash

OK. I used honey instead of brown sugar. Maybe that's why mine wasn't great. Also I had to cook my squash for more than an hour in a gas oven and they still weren't very tender.

Peach Cobbler Dump Cake I

NOTE: YOU HAVE TO PRESS the cake mix DOWN into the liquid or you will end up with powder on top. ALso, if you want a healthier variation, use frozen peaches or drained peaches to cut down on SUGAR. IT WAS TOO SWEET FOR ME. So, Use water instead of the fruit juice. Also, instead of butter , you can use OIL or smart balance. I use a mixture of canola and light olive oil and drizzle this over the top (oil won't clog the arteries like butter or margarine).

Just okay. My bars wouldn't hold together, less like a bar and more like a crumble or crisp. I used Orange Cake Mix which made a nice flavor combination though.

Creamy Orange Cake

VERY GOOD except for the gloppy icing. The recipe was follwed exactly and the icing turned out too thin and too much like pudding. I had to leave it off and made a butter cream icing with orange extract. Then it was perfectly delicious.

Southern Fried Chicken

OUTSTANDING. We've tried many fried chicken coatings and this is one of the best. Chicken got really golden brown and crispy. I did soak chicken in ice salt water before hand for 30 minutes and used Olive oil to pan fry. Also added more cayenne pepper to mix. THANKS

Eggplant Burgers

VERY GOOD. Great idea. Changed recipe a tiny bit though.. I coated the slices with egg and bread crumbs and placed in oven on greased cookie sheet. Frying them in oil makes them very greasy. I will make these again and again. THANK YOU.

Garbanzo Bean Chocolate Cake (Gluten Free!)

Nice chocolate taste. Problem with mine was I don't have a food processor so I mashed the beans by hand. As hard as I tried there were still tiny chunks of garbanzo beans. So the texture was way off in my cake...... If I try again, I will use a softer bean (pinto or black beans). I've made cakes with them before, and those have always mashed into the right consistency.

SORRY but this was more like a cobbler than a crisp. My topping was not crisp but kind of doughy / bready. I will use COLD margarine or butter next time.

Strawberry Cake II

EXCELLENT CAKE. I made a few adjustments, used strawberry cake mix for example. Very good. I had to use smart balance spread because I ran out of butter and it was still great.
