Peach Cobbler Dump Cake I

Reviewed: Feb. 4, 2007
NOTE: YOU HAVE TO PRESS the cake mix DOWN into the liquid or you will end up with powder on top. ALso, if you want a healthier variation, use frozen peaches or drained peaches to cut down on SUGAR. IT WAS TOO SWEET FOR ME. So, Use water instead of the fruit juice. Also, instead of butter , you can use OIL or smart balance. I use a mixture of canola and light olive oil and drizzle this over the top (oil won't clog the arteries like butter or margarine).

DELICIOUS!!!!! I love onions so I add a bit more onions, but this recipe is great. I want to also try this , but with lentils or green beans.

Tofu Sandwich Spread

Reviewed: Apr. 8, 2007
VERY GOOD. Doesn't smell like sulfur like real egg salad, so you can take this to work. But I add some curry for yellow coloring (makes it look like egg salad) and a bit of red pepper for extra flavor.

Jay's Signature Pizza Crust

Reviewed: Apr. 15, 2007
Used a pizza stone. Very good but a little bit time consuming with the hour wait. Healthier than the store bought pizza dough packets and frozen pizzas by far. Rose very nicely. Kept shape very well (didn't spring back). I used white sugar instead of brown and added 1 tsp of garlic powder to dough. Cook dough for at least 5-10 minutes before adding topping and cook in bottom shelf. Nice easy recipe.

Pizza Sauce I

GOOD SAUCE. I didn't have fresh basil though and I used a can of No Salt added tomatoes instead, which I drained somewhat. Thanks , I'll be using this recipe again. I think it will also be nice on pasta.

Eggplant Burgers

Reviewed: Jun. 30, 2007
VERY GOOD. Great idea. Changed recipe a tiny bit though.. I coated the slices with egg and bread crumbs and placed in oven on greased cookie sheet. Frying them in oil makes them very greasy. I will make these again and again. THANK YOU.

Best Ever Popcorn Balls

Reviewed: Sep. 17, 2007
I made mine with just butter and marshmallows, vanilla and salt and they were delicious. I put the pop corn in a brown lunch bag and microwaved it, no trans fat that way! These tasted GREAT. I WETTED my hands with water and making balls was Super Easy. Not sticky at all.

Orange Baked Acorn Squash

Reviewed: Dec. 16, 2007
OK. I used honey instead of brown sugar. Maybe that's why mine wasn't great. Also I had to cook my squash for more than an hour in a gas oven and they still weren't very tender.

My carrots turned somewhat brown. Taste and texture were awful. Not to my liking. Sorry.

Cranberry Apple Casserole

Reviewed: Jan. 13, 2008
Very Good, but I used fresh granny smith apples b/c the family doesn't like canned apple pie filling. I also used a mixture of cranberries and cranberry sauce. I ate too much when it was warm. It was very good warm but it actually improves after you let it sit a while.

VERY GOOD. I didn't use butter for the bread crumbs though. I used olive oil and it was very tasty. Almost left the bread crumb topping off , glad I did add the breadcrumbs. Will be making this again. Nice, easy tasty recipe.

Aunt Janet's Pumpkin Dump Cake

Reviewed: Feb. 10, 2008
YUMMY. But... I didn't follow the recipe exactly due to my father's heart disease. I cut out the butter and reduced the four eggs to one egg. I used about 1/2 the evap. milk. Skipped the sugar entirely, used half a box of cake mix and it was so good. Topped with a scant dusting of powdered sugar.

Seven Layer Taco Dip

Reviewed: Feb. 11, 2008
Very Delicious, but I didn't have the green peppers or sour cream / cream cheese . I added ground beef and sauteed onion, and guacamoke. I also used a MSG-free taco seasoning mix that I made myself from a recipe on this site. I will be making this again.

Beef Noodle Soup

Reviewed: Feb. 20, 2008
This is close to my Dad's favorite beef noodle soup except omit the carrots and omit the bouillion and add a large can of crushed or diced tomatoes. We pressure cook the beef and skim the fat as well.

Easy Lasagna I

The regular lasagne noodles didn't cook well without boiling. I added more liquid to the dish and they did cook most of the way but tasted somewhat starching. Otherwise tasty.

Fresh Cherry Cobbler

Reviewed: May 28, 2008
Sorry but we definitely did NOT like this. The cherries did not cook through even after cooking it 10 minutes extra. They were a weird texture, almost like grapes. I cut the butter down by half and it was still WAY TO GREASY... a spongey bland cake swimming in butter with half cooked cherries. I prefer a crisp or a crumble over this anyday.
