Jen's Heavenly Egg Salad

My go to egg salad now! I usually add a stalk of finely chopped celery for crunch. If I don't have any green onion on hand a bit of diced sweet onion or shallot works as well. I LOVE that the lemon juice gives you a nice moist egg salad w/out having to use gobs of mayo. I usually end up using even less than the 1/4c of mayo. Deliious!

Penne Pasta with Spinach and Bacon

This was delicious! My husband had three helpings....my kids picked thru and only ate the penne, but at least they allowed all that spinach on their plates! I used whole wheat penne and uncured nitrate free bacon. Left out the olive oil as many reviews suggested. Topped with parm. Will definitely make again. I bet sliced black olives would be yummy....

Slow Cooker Chicken Cacciatore

It was just OK. Used many of the suggested variations. Kids wouldn't touch it. It was so easy and healthy I was really hoping to put it in the monthly menu but I don't think I will, too bland.

Mom's Zucchini Bread

Delcious!! The two loaves didn't make it 24 hours in my house!! I used half raw brown sugar and half white. Used white whole wheat flour. used only 1/2 cup oil and 1/2 cup applesauce. Threw a handful of choc chips into one of the loaves. Yummmmmm

Pumpkin Bread

Fantastic! Whole family loves it. I've made it twice now - once with pumpkin and once with organic canned butternut squash. Family loves it best when I toss in some chocolate chips :). I cut the sugar by about a cup and use 1/2 raw brown sugar and 1/2 white sugar. I also used half whole wheat pastry flour and half all-purpose. Added some vanilla extract. Subbed 1TBS pumpkin pie spice for all other spices. YUMMM!

Cathy's Banana Bread

I was disappointed with this. Couldn't taste the sour cream or the bananas and it was not especially moist. 3 stars because my husband and daughter did like it. Made it in the bundt pan as shown.

Lemon Zucchini Bread

I can't even count how many times I made this over the summer! So good. I made a few changes to make it healthier: whole wheat pastry flour instead of white, 1/4c raw sugar and 1/4c honey instead of white sugar, fill 1/2c with 2TBS canola oil and the rest with applesauce, zest one full lemon and juice 1/2 lemon, 1tsp vanilla extract. Sometimes I also add grated carrot and flaxseed. So delicious warm out of the oven with a touch of butter!

Sugar Cookie Frosting

Yummy frosting! Worked great for icing and decorating sugar cookies. Love how it stiffens up without getting hard. Made it twice - once following recipe exactly and once using 1/2 shortening and 1/2 butter instead of all shortening. It tasted better the second way, I think.

Sugar Cookies with Buttercream Frosting

Very good! I was working with a 3yr old and found that sticking the rolled out dough back in the fridge for a few minutes BEFORE cutting made transferring to the cookie sheet easier.

Colonial Hot Buttered Rum

I was really disappointed. It was watery yet overly greasy without much other flavor. I couldn't taste the spices at all and definitely did get that "cinnamon bun" flavor that other reviewers mentioned. Was looking for a great hot holiday after dinner drink...I will keep on looking.

No Bake Chocolate Oat Bars

I was so disappointed by these! I had really high hopes with all the good reviews too. 2 stars because, Yes, they are really easy and you probably already have the necessary ingredients in your pantry. BUT...they are bland. Very bland. I also cut the butter to 3/4 cup as per many of the reviews, but I would NOT do that again. My oats are a little too hard even though I cooked them the full 3min...there was not enough liquid to be absorbed w/only 3/4 cups of butter. Bummer!

Squash Stuffed Chicken Breasts

Very good. Made a few small changes: 1)used red bell pepper instead of green 2) used chedder/jack cheese mix 3) Brushed each breast w/oilve oil and dredged in whole wheat italian seasoned bread crumbs instead of flour.
