To Die For Blueberry Muffins

Made this with my granddaughters this morning and they turned out great. We doubled the recipe except for the topping and we had just the right amount of topping. I also added some lemon extract and lemon zest. I used frozen blueberries and mixed them in a bit of the flour mixture before we folded them in, but this dough is thick enough that they likely wouldn't have sunk to the bottom anyway. I also started them at 350 for 8 minutes before raising the temp to 400 based on one of the earlier reviews here. They had a nice crown.

Easy-Bake Risotto

We enjoyed this recipe, but I did make some changes. I prepared it stove-top, like a regular risotto. That was just as easy for me. And I had some lemon grass, so I added it while it was cooking. I love lemon grass, so I liked the flavor it gave the dish. The only drawback with that is fishing out the grass before serving.

Breakfast Casserole III

I cooked the potatoes in the microwave the night before I was going to make this and the next day while they were cool from the fridge, it was easy to grate them, mix them with some sauteed onions and peppers and butter and put them in the baking dish. I also added some cream cheese (about 3 oz. I had left over from something else) with the eggs. It was good and we also enjoyed it as leftovers.

Amazingly Easy Irish Soda Bread

This was really great and my husband and dinner guests really enjoyed it on St. Patrick's Day. I added raisins and we also loved the left-overs. It wasn't quite done in the center when the crust was brown, even when I had lowered the temperature and reviewers had suggested, but I think my oven runs hot, so I'll just lower it more next time.

Hot and Sour Chinese Eggplant

I thought this was great! I changed the recipe a bit -- I sauteed some onion, green pepper and garlic and then added the eggplant (I used baby eggplant that I got for a great price at the market) and also some cubed potato that I had cooked to soften a bit in some water in the microwave. I doubled the sauce and used sesame oil instead of chili oil, as I didn't have any. I then added a bit of crumbled cooked sausage that I had in the freezer. It was a delicious one-dish meal!

Emily's Famous Hash Browns

These were the best hash browns I've ever made. Next time I might add a few more spices, but they were good as the recipe was written, but with less oil.
