Apricot Balls
Very yummy and easy! I chopped apricots, california figs, and sliced almonds in a blender, and mixed it all with some of the coconut and just enough condensed milk to make it stick. Then I rolled it in chopped almonds/coconut for a slightly crunchy exterior - they're super sweet so I didn't add any sugar. And they definitely taste better cold :)

Egg and Sausage Casserole
yummy! i used turkey sausage and added oregano to it while it was cooking. i also sprinkled in some broccoli florets for color/flavor, and i added a bit of salt/pepper/chili flakes to the egg as well. i only used 2 cups of cheese (mixed mozz and cheddar) and it was plenty! very yummy!

The Best Lemon Bars
This really is an amazing (and easy) recipe! I followed most of the reviewers and added a tsp of salt to the crust, baked it for 24 minutes, and let it cool completely before adding the lemon part (with 6 tbsp bottled lemon juice). Took it out at 20 min, sprinkled powdered sugar, and refrigerated for a few hours before trying - these taste better than the ones you get at most bakeries!
