Breakfast Corn Muffins

I made these breakfast corn muffins GLUTEN FREE by simply using Corn Flour in place of the AP flour. The other change I did since I don't have buttermilk handy is to add a tablespoon of vinegar to milk (and allow to sit for 5 minutes). Everything else stayed the same and the soft gooey tastiness in the middle made if FANTASMIC! Great addition, Nikki! I wonder if it has anything to do with the substitution of the flour, but next time I will try adding more baking powder to see if the fluffiness factor will go up nicely. Otherwise, thank you for sharing!

Black Magic Cake

I made my own buttermilk by sitting 1 cup soymilk and 1 T vinegar for about 10 minutes. 'Baked for the complete 40 minutes. I made this for a group of grown boys who love dessert and they just couldn't stop raving about how moist and perfect the cake turned out. We ate the cake plain with ice-cream. The next day the cake is just as moist and delicious. It has brought me back to my childhood devil's food cake-out-of-a-box eating days. Well, those days are over and they are better now! Thank you for this recipe!

Homemade Black Bean Veggie Burgers

My 4-year old loved it so that alone says it all! Easy to make! I put in 1/4 T chili powder because i was concerned it would be too hot for my son. 1/2 T cumin only and 1/2 T sweet chili sauce. I did add 1/2 a cup of bread crumbs and thought it was too watery still, so I crumbled in some extra crackers we had on hand. I agree that the beans need to be drained of excess water, but most importantly, after you have the ingredients mixed up, you have to judge for yourself: if it's too watery and looks like it might be too hard to hold together, add more to bulk it up! Next time I'll try adding corn and perhaps different spices. Have fun experimenting!

Lentils and Rice with Fried Onions (Mujadarrah)

Based on others' reviews, I didn't want to make this meal taste bland and therefore to review the recipe itself, I rated it with 4 stars. I went ahead and added some spices (put in when I added the rice) including 1 t of McKay's seasoning ("chicken bouillon), 1/2 t cumin and 1/2 t corriander. I also added dried garlic. I slow cooked the onion to brown (much longer than the 10 minutes the recipe calls for). I was surprised that my picky-food-eating husband absolutely loved it! That means this is a definite keeper! And guess what?! Because I am where I am, we don't always have yogurt or sour cream on-island, and the dish was tasty even with out it! Next time, I will try adding a dash of cinnamon. And yes, knowing the amount of water to use would have been helpful.
