Garlic Chicken, Vegetable and Rice Skillet

Very good though I skipped the garlic and parmesan but it was so easy to make and is so flexible I think it could be seasoned for any taste

Divine Hard-Boiled Eggs

Works lovely, but I crack the shells of the ones I put in the cold water so they peel easier, the ones that won't be eaten right away go straight to the fridge w/o the cold bath though.

Awesome Sweet Potato Casserole

It tasted fantastic. I made it almost exactly. I used a 20oz can of crushed pineapple but I pressed the liquid out and I just sprinkled some plain brown suger on top.

Chocolate Pumpkin Cake

I did these as cupcakes and they were amazing. 2/3 full aluminum cups for 17 min. I used a hill country fair brand devils food cake mix.

Chicken and Potato Soup

It was wonderful, rich, hearty, flavorful and easy to clean up. I did make a few adjustments to work with what I had on hand. I subbed canned pumpkin for the peas, and skipped the onion and hot pepper sauce. I used chicken stock and the canning liquid from the veggies in place of the milk. I also finished mine by slightly mashing the soup so the whole thing was thick with small chunks in it rather then liquid with large chunks but thats personal preference.

Lemon Icebox Pie I

I loved the pie. I do add a little lemon extract. the meringue needs help though. I found out if you use a small bowl, powdered surger, and cream of tartar also whip the egg whites before you add a pinch of tartar and 6 tbs. powdered suger slowely while still whiping
