Easy Cheese Ball II

Quick & easy appetizer to make for company. I cut this recipe in half, but I think next time I will do the full recipe, divide into 2 balls & freeze one portion.

Beef and Mushroom Stroganoff, Aussie Style

My 2 fussy teenagers loved this! I only used fresh button mushrooms & added some leftover roast beef. Added light cream so it would have less fat. Very tasty!

Pumpkin Gingerbread

Way too much fat & sugar in this recipe for me,so made many changes to make this a healthier bread. Cut the sugar in half, used 1/4 cup oil & 3/4 cup applesauce, substituted with light spelt flour & added 1/4 cup ground flax. Still turned out moist & delicious!

Orzo with Parmesan and Basil

Delicious side dish. Made this for my family & they loved it. Actually my 2 kids & I ate before my husband came home from work & we cleaned the pot!. Now I have to go make another batch before hubbie gets home. This is a great basic dish with endless possibilities for additions. Can't wait to try it with garlic. Thanks for the great recipe!

Penne Pasta with Spinach and Bacon

Tiramisu Layer Cake

Mama's Italian Wedding Soup

Loved the flavor of these little meatballs! I baked them in the oven for 15 min to drain some of the fat first, then added them at the end. Otherwise, followed the recipe exactly. Great tasting soup!

Bread Machine Focaccia

I used light spelt flour so had to adjust the water accordingly. We have an allergy to garlic in our family, so used minced onion instead & added some dried oregano & basil. Tasted pretty good & would make a great pizza crust if rolled out thinner.

Blueberry Pumpkin Muffins

Looked a long time for a healthy pumpkin muffin recipe low in sugar & fat & finally found this one! Substituted with spelt flour & added ground flax meal. Great moist & tasty muffin!

Tasty Buckwheat Pancakes

I used 1/2 c buckwheat & 1/2 c light spelt flour instead. Substituted with almond milk. They turned out great! Will add ground flax meal & blueberries next time.

Pasta Hot! Hot! Hot!

I added a couple handfuls of frozen broccoli & shrimp to the pasta as it cooked. Also added 1 tsp dried basil to the oil. A very quick & easy dish to make at the last minute.

Cheese Dipping Sauce

Cut salt in half, but it was still too salty. Will try again, but will only add a pinch of salt next time. Tasted great otherwise. Goes well on top of baked potatoes.

Potato-Crust Chicken Quiche

Great way to use up leftovers. Used baked potatoes, cubed to make crust & added some cooked broccoli. A bit too bland for my tastes though. Will try this again, but will add onions & garlic.

Spinach Tomato Tortellini

I loved this dish & can't wait to make this for company. It is very quick & easy to make.I used light cereal cream instead of the heavy cream. It was still delicous & creamy. Will add a little more garlic next time.

Tuna Noodle Casserole from Scratch

So happy to find a recipe with no canned soups! I tweaked the recipe a bit by cutting the butter in half & adding more garlic. I used 1 cup of milk with 1 cup of organic chicken stock for more flavor. Added the cheese to the sauce. Very tasty casserole!

Best Bruschetta Ever

This was my first time ever making bruschetta & was very pleased with the result. I didn't have time to let it chill for 8 hrs, so made mine 2 hrs ahead. Served it on slices of French baguette, sprinkled with mozzarella & melted in oven several min @ 350F. Brought it to a baby shower & was eaten up very quickly!! Thanks for this great & easy recipe.

Baked Slow Cooker Chicken

I've used this recipe many times & the chicken has always been moist & tender. I brush with olive oil first then sprinkle with whatever spices I have on hand. Chicken often falls apart, but that's ok. It still tastes great! I always cut up the leftovers to make soup or chicken tetrazzini the next day.
