Roasted Brussels Sprouts

I followed the recipe exactly (except that I cut the brussel sprouts in half first) and found these to be surprisingly good. I've made them for several holiday dinners and other reviewers are correct, they actually do tasted better when they turn brown on the edges. I would give this recipe 5 stars, except that some of the tasters found the roasted sprouts a tad dry.

Crustless Spinach Quiche

This is great and so easily to make. As other reviewers have suggested, I only used two cups of reduced fat cheese, and it turned out perfect. Red peppers add some desired color and flavor.

Colleen's Slow Cooker Jambalaya

This is another one of the those recipes where the quality of the ingredients selected makes a big difference. It is spicy (which is good) and the sauce is very thin (which isn't). I'm not sure if it will help, but I am going to add some tomato paste next time I make this. Also, it the interest of saving money, the shrimp could be left out, they didn't add much.

Cuban Pork Roast I

Of all the recipes I have found on this site, I use this the most! It makes the most amazing medianoches sandwiches ever (check out this recipe as well). I use dried, rather than fresh spices, but still cook them in a pan with crushed garlic. I generally don't marinate, but instead place the pork and marinade in a crock pot with a cup of chicken broth. 8-10 hours on low depending on the cut of meat. I have also used this recipe with beef tenderloin and shredded it to make soft corn tacos with onion and cilantro. Amazing!

Coconut Tofu Keema

Perhaps I made some mistakes, but this recipe was not the best. I think that one needs to be very careful with the quality and quantity of spices used. Mine turned out overwhelming gingery with dried Mccormick's ginger and the coconut milk flavor was completely buried. I imagine it would have been better with fresh...

Zesty Marinated Asparagus

After marinating overnight, it wasn't as pretty as I would have liked but was a real pleaser at Easter dinner. The boiling time really depends on the type of asparagus you buy, if the stalks are small and tender a minute is perfect. I skipped the parsley, it wouldn't have added much. Thanks for sharing!

Slow Cooker Kielbasa and Beer

Other reviewers have left some very good suggestions on how to improve this recipe. I added garlic and onion, stone-ground mustard, and a little honey. Tasty with redskin potatos and sour cream. 3 stars w/o additions; 4 with.

Honey Garlic Vinaigrette

I love how simple this dressing is. I definitely think the amount of oil used should be reduced! I went half and half with the vinegar and oil, and added a little extra honey. (Note: I am a huge fan of vinegar, this advice might be too vinagery for some tastes).

Romaine Rice Tuna Salad

This was very quick, easy, and healthy (I used brown rice), but it seemed to be missing something. I served it cold with black olives and a sprinkling of feta. However, as the recipe is written, I think too much rice may be called for. Cold, this dish kept very well. A good dinner for people in a hurry. My boyfriend really liked this, so it will be made again.

Thai Pork Loin

This dish turned out much tastier than I initially thought it would. I used slightly thicker cuts of pork, lightly breaded with flour and egg, and added a crushed clover of garlic and a little lemon juice to the simmer sauce. I did not reduce the amount of wine used and the sauce was very flavorful served over white rice.

City Chicken

I made this for company on New Year's Eve. My friend said it was the "fanciest meat she had ever eaten." I alternated pork and veal on the skewers, as this is how I remember the dish being prepared. As another reviewer noted, if you've never had this before, you have to try it!

Banana Nut Pancakes

A quick and easy breakfast treat. I used half of the oil, and brown sugar, and they turned out great. I also didn't make the topping, as it sounded a little rich for breakfast. They were tasty with strawberries though :)

Eggplant and Lamb Stew

This was a great meal! I used lamb stew meat, substituted ghee for butter, and wine for water. It was delicious served with brown rice and a cucumber-yogurt salad. It was definitely a favorite for both my boyfriend and I.

Applesauce Pork Loin

This recipe did not turn out as well as I had hoped. The sauce blackened after about an hour from the cooking temperature, and the pork loin still had another hour to go! Flavor wasn't anything special either. It was easy, and my boyfriend said he liked it, but I will not be making this again. Maybe add the applesauce mixture later, or cook at a slightly lower temperature?
