Chicken Fajita Melts
Very good, very easy recipe. Just to be different, I went with Chibatta (sp?) rather than French, also because the store sold them in smaller sizes and i didn't want that much left over. Also, i happened across shredded cheese that already had taco seasoning. With no seasoning to put into the skillet with the chicken, perhaps that's why I got a very thin sauce with the chicken. But really good, so much neater than chicken fajitas!

Mexican Pork Chops
Loved the recipe. I've tried it with black beans but there's something I liked better about kidney beans. Also, I marinated the chops in an Italian dressing, to which I like to add the 'juice' from a jar of hot peppers for some more kick. I also added some hot peppers to the mixture. Really a great, spicy dish!

Orange Roasted Salmon
Absolutely awesome. Chose this recipe becaues of the few ingredients it required. Sooooo easy but sooooo good, and nice and light. Great summer dish! All I really needed to buy was the salmon, most everything else we already had at home.
