Belgian Endive au Gratin

Awesome Slow Cooker Pot Roast

This turned out great! Added baby carrots, sweet onion and a little bit of celery, 1/2 c. red wine and a few hefty dashes of Worcestershire sauce. Rubbed meat with rosemary, oregano and thyme. Once cooked, strained the broth and then thickened with flour to make gravy. Added 1/4 c. or so of sherry to taste. Fantastic with new potatoes!

Slow Cooker Carnitas

Hubby said these made better fajitas than he'd had in an restaurant. I added a quartered sweet onion to the crockpot, as well as fresh minced garlic. Also quartered the meat and doubled the spices.

Actually Delicious Turkey Burgers

My husband said these were out of the park! We scaled back the recipe to serve 5 (since we had a 1.25 pounds of ground turkey). Added liquid smoke, as suggested by other reviewers. Instead of eating on a bun, we served them on a leaf of green lettuce, topped with feta and sliced roma tomatoes. No other condiments were needed (in fact mustard overpowered the delicious flavor of the burger). This is a keeper!!

Mom's Island Treasures

Excellent, even after my goof! I realized too late that I didn't have an egg, so I substituted 1/2 a ripe, medium-sized banana. The cookies still turned out great. I've also made these a with quick oats and a few tablespoons of ground flax seed in place of equal parts of flour, or used only whole wheat flour. All have turned out great. This is now our favorite cookie recipe. Thanks!!

French Onion Soup with Celeriac

My husband absolutely LOVED this soup! I had purchased some celeriac and came across this recipe by using the "ingredient search" function. What luck! This was an easy, tasty and unique approach to a classic soup. I was sceptical at first about adding red wine, but the flavor it added was rich and hearty. I didn't have any beef stock on hand, so I used 3 cups of chicken broth, 1 cup of water and 2 beef bullion cubes. It turned out fine, though perhaps a little salty. I'll try using beef broth (or just one bullion cube) next time. I used Gruyere to melt atop the soup, which melts nicely and isn't a strong as "Swiss" cheese.
