Poor Man's Shepherd's Pie

I didn't have green onions so I caramelized a whole white onion and then toasted some almond slices (sat both aside) then browned the meat and added all the other ingredients plus the onion and almonds and a can of corn. It was pretty tasty.

Pfeffernusse Cookies

These were a big hit! And recipe made alot of cookies. I didn't count but it was 4 cookie sheets worth. I used white pepper instead of black and accidently used 1.5 tsp of ginger (I picked up the wrong bottle). They turned out great!

Iced Pumpkin Cookies

I'm glad I went to buy the ground cloves for this recipe. It gives the cookies and little kick. The icing is great too and looks wonderful.

Swiss Steak Italian Style

Excellent! I used a whole onion and 1 jar of garden vegetable pasta sauce since I didn't have the green peppers or celery. Also threw in some sherry since I didn't have quite enough red wine. Came out surprisingly tender and tasted delicious!

Roast Beef with Coffee

I also tweaked the recipe quite a bit but the result was fantastic! First, I soaked the meat overnight in a mix of red cooking wine and balsamic vinegar. After rinsing off the marinade and stuffing the roast with the garlic, I seasoned it with garlic salt, oregano, cayenne pepper, and red pepper flakes then browned it for about 10 minutes. Then it went in with some potatoes and onions. It smelled great while it cooked and it tasted wonderful. The gravy turned out nicely, as well. I'll be making this again.

Creole Black-Eyed Peas and Rice

This was superb and very easy! I didn't use any meat since I was in charge of the side dish to go with our ribs. I also used dry beans that had been soaked and cooked already. I didn't have Creole seasoning, per se, so I used Blackened seasoning (1 tbsp) and Jalepeno seasoning (~1/2 tbsp) instead. It definately had some kick to it!

Mincemeat/Pumpkin Chiffon Pie

Ok...so I'd never had mincemeat-anything (apparently it's a Northern/British thing) or a chiffon pie before but this seemed like an interesting/fancy dish to bring to a dinner. I was nervous as everyone took their slices but it tasted great!! It was a big hit!

Muenster Chicken and Mushrooms

After getting my mind set on this recipe, I realized I didn't have any bread crumbs or chicken broth so I just winged it. I used whole wheat flour mixed with dry onion soup mix and some seasoning for the bread crumbs and used cream of mushroom for the broth. I also browned the chicken before breading it and sauteed the mushrooms in a little red wine and added some red wine to the cream of mushroom. I got a "wow" with the first bite! It was so good. 4 Stars because of my alterations.

I served this over brown rice without cheese (or tomatoes). I also made a few adjustments for thicker sauce by halfing the beef stock and adding about some cornstarch. I added 1 tbsp each of dijon and worcestershire with the stock as well for the extra flavor, as suggested by another member. Turned out excellent!! My boyfriend loved it and it was quite flavorful.

Chicken Nut Puffs

I had to substitute celery flakes and Tex Mex seasoning, AND cook them on my George Foreman grill (my oven was out of commission from last night's dinner...long story), but I think they came out even better than if I'd have baked them. Not dry at all, almost like crab cakes. The almonds were perfect, too! I'm definately going to make them again.

Creole Chicken II

I didn't have all of the ingredients, so I substituted cream of chicken for broth and stewed tomatoes for paste. It smelled SO GOOD! I served it with brown rice mixed with a fruity chutney (it was a gift and the chutney jar said it went well with curried dishes). I loved it, but it wasn't the misses' cup of tea (peppers or curry).
