Cathy's Banana Bread

This is more banana cake than plain banana bread... I am not a fan of banana bread but friends and family are! =) I used vanilla greek yogurt (2%) in place of the sour cream and it worked perfectly. Really amped up the vanilla flavor. Recipe doubled easily for church potluck. This will not be the last time I make this.

Sturdy Whipped Cream Frosting

Amazing! Holds up beautifully and the taste is great too! These do not always go hand in hand. I used regular cream cheese and cut back on sugar just a bit. On red velvet cupcakes for valentines and now on carrot cake for easter!

Playgroup Granola Bars

I wanted to make something for back to school care packages for my nephews and this got the nod. Not too sweet and chewier than your usual granola bar. I used a 9x11 inch pan so they were slightly thicker than the picture. My marathon runner husband loved them and immediately requested more as did our puppies!

Baked Pineapple Casserole

Even people who don't like sweet side dishes LOVE this! It is a staple in our house with ham for the holidays. I do use butter instead of margarine and add 3 more slices of bread than the recipe calls for but the flavor is wonderful.

Triple-Cheese Macaroni

I am still searching for the PERFECT southern mac and cheese but this is close! I like a little less mustard taste in mine and will try again with white cheese. Texture was really good and the taste was delish!

Sour Cream Fan Rolls

These rolls saved me for Easter dinner. I normally do a sour cream roll that you have to cook. Apparently I was more tired than I realized and wrecked those... These were a great substitute! Very moist but they don't keep their softness for more than a day.

The flavor of this recipe is worth 5 stars but the instructions are worth 2-3 stars... Thank goodness for some other reviews. I hope the following details are helpful for others. It is easy when you break it down – Start with the sugar mixture. While the sugar is boiling to temperature, then work on the gelatin. While the gelatin melts, then work on the egg whites. Don’t forget to check the sugar syrup intermittently since once it reaches 245, it will quickly go to 260. Also this is much easier to do in a stand mixer than with a hand mixer. The amount of “fluff” is a lot. *Sugar syrup – Use a large saucepan or small stock pot. It will make it easier to add the gelatin mixture later. It takes about 15 minutes to get the syrup to temperature over medium/medium-high heat. *Blooming the gelatin - Put 3/4 cup of COLD water in a small saucepan and sprinkle each tablespoon (or envelope) of gelatin over the water slowly in an even layer. Let rest for 3-5 minutes. Place the saucepan over low heat and stir until the gelatin mixture is totally liquid. Keep over low heat if this liquefies before the syrup is ready. *Egg whites – Once gelatin is liquid, put whites in bowl Beat until soft peaks form. Turn off mixer while finishing the sugar-gelatin mixture. Turn the mixer back on to low speed before adding the sugar mixture in a steady stream. Peanut Butter and Pumpkin Dog Treats

The dog likes them and they are easy easy to make. We used cat and house shaped cookie cutters. Will be giving as gifts. They seem a little plain but I am happy to have something not based on meat products or bananas as an option.

Best Ever Chocolate Cutout Cookies

Not sure what caused difficulty for others. I loved the texture of this dough! We rolled (using a heavy dusting of cocoa instead of flour) to about 1/4 to 1/2 inch and cut using 3 inch cutters. Baked for 8 minutes and they were perfect! Loved the "crisp brownie" texture. Also am using this as my "gift cookie" for work colleagues. Using 6 inch tree and snowflake cutters and then decorating with royal icing. P.S. Aren't grandma's recipes the best??

To Die For Blueberry Muffins

Great recipe. I did increase the amount of milk slightly. I think my flour was a little dry. We did one batch with blueberries and a second with blackberries. When my husband will eat a muffin without butter, I know it's a winner!

Hershey's ® Hot Fudge Pudding Cake

Oh yum! This was a real hit at dinner with friends on a snowy Sunday night. We topped it with vanilla whipped cream. Definitely a keeper and I love that it's something you can whip up on the fly out of the pantry.

Banana Nut and Ginger Bread

Made this for a friend after she gave birth to twins. Didn't know she wasn't a banana bread fan. She is now!! Subbed raisins for the dates and used Oatmeal Stout. Wonderful flavor and texture. Doubling the recipe for holiday gifts.

D'Amaretti Biscotti

DELICIOUS!! Texture was good too. Extract can be replaced with fiore de sicilia (orange flower water and vanilla) for another traditional italian flavor. I made 2 batches one with anise and one with the orange flavor. Everyone was happy!
