About this Cook
I work at home making it more convenient to shop, cook, experiment, and treat friends to share.!
My favorite things to cook
All my favorite things are new recipes to which I 'tweak' to fit my own ideas. I love new and old desserts including cakes, pies, cookies, donuts, puddings, cream puffs, ice creams, caramel corn, fudge, brownies, anything new. There's a delicious recipe on the peanut butter/ chocolate chips from Nestle. Cheesecake squares - these were fit for royalty! Rolls, pastries, breads, casseroles, roasts, beans of any kinds, pastas, soups are a favorite. Then there's breakfast, i love all of it, waffles, pancakes, fruit sauces, french toast, frittatas, omelets, potatoes fried, mashed, baked, escalloped, potato and pasta salads, I love good food and so have to cook it. Friends hate me, I don't gain weight until I drink a coke or eat a chocolate bar.
My favorite family cooking traditions
My mom put me in charge of much of the cooking for our family of 6. She would call home from work, (her own business) and tell me what to get at the store, or she would have left instructions for same on paper in the kitchen. Vegetable beef soup was absolutely a family favorite and usually the first dish cooked when the weather changed to fall. I also was great at puddings and cream pies with meringue on top. My new family tradition for past 15 years has been tamales. Muy Delicioso!
My cooking triumphs
Quatro Leches egg nog cake, cherry pineapple compote, cream of pea soup, creamed hominy casserole,
My cooking tragedies
flour tortillas - I will continue to try until I get it right!

Buttermilk Pancakes II
These are so easy and so excellent! They are fluffy, tasty, easy to pour, flip, and stay fluffy. I followed the recipe, I had made some fruit compote yesterday from leftover blueberries, strawberries, and raspberries, a little water and about 1/4 cup sugar cooked down to a delicious fresh tart and sweet fresh berry topping. IHOP it's not! Delicious.

White Pizza
Yummy! We love pre-baked crusts and are so tired of pepperoni and extra cheese we can't wait to try this. I love this recipe and will check back with results. And honey EVOV ain't enough white for me...

Mini Salmon Loaf
This is delish, but if you're going to the trouble why not use fresh salmon, poach it and flake the meat? Or buy freshly cooked salmon found in the refrig. section w/ other fish. Instead of chopped celery we sauteed the stalks w/ leaves on them and took them out after cooking, we don't like the cooked celery pieces, my bad. EVOV instead of veggie oil is tasty and try a touch of tabasco instead of black pepper! Also add the same fresh raw dill, to be used in sauce, to the loaf mixture for a surprise complement.
