Cinnamon Rolls III

Reviewed: Mar. 1, 2007
I just made these - WOW!!! These turned out amazing!!! I do not have a bread machine so I worked the dough by hand: mixed yeast with warm milk, let stand 10 min. In bowl of electric mixer, mixed flour, pudding, sugar, salt. Added water to yeast mixture then added yeast mixture to dr ingredients and mixed on low speed until relatively uniform. Added butter and continued mixing on higher speed. Finally, I turned out the dough onto an unfloured surface and kneaded for ~10 min by hand. I then proceeded to follow the recipe: let it rise, roll, rise. I substituted whole wheat flour for the bread flour - even though this gave the buns a whole wheat flavour, which I am not sure I prefer, I STILL love them!!! Just so fluffly, light, and tasty!!!! Simply DEVINE!!! I will DEFINITELY try these again, perhaps with all purpose flour. YUM!

Home-Fried Potatoes

Reviewed: Feb. 28, 2007
Great recipe!!! This is really a hash brown but with a fabulous dinner twist - the onion and pepper really make this dish!!! I used red peppers as I did not have green and seasoned more to satisfy my personal taste. Will definitely make again!!!

Jamie's Cranberry Spinach Salad

Reviewed: Feb. 18, 2007
Simply AMAZING!!! This salad was SUPERB!!! I didn't have cranberries so I soaked raisins in hot milk and employed those instead. The dressing is fabulous! I will definitely make this salad again, perhaps I will try tossed greens next time.

Belgian Waffles

Reviewed: Feb. 17, 2007
Waffles were ok - not bad, but not great. I personally found that they didn't have much taste and needed to add extra sugar and vanilla. They did not, however, taste like yeast, as others had mentioned. What I did like though is that because the waffles did not have a characteristic taste, they are well suited for all types of toppings. I think I will keep searching for a better recipe or perhaps will stick to my usual baking soda one.

Creme Anglaise I

Reviewed: Feb. 13, 2007
Excellent recipe!!! I also added about 2 tsp almond extract, which was the perfect touch!!! I used this recipe to accompany a chewiest brownie recipe off this site and it turned out fabulous! I also made a raspberry syrup in addition to the creme anglais and served the brownie with a scoop of vanilla ice cream. Absolutely amazing! If your creme is turning out grainy, it means that your yolk is cooking - in this case you must use a heavier pan, and during cooking stir constantly and vigorously. You may also take your pan temporarily off the heat to stir the yolk back into smooth consistency. If all else fails, the creme can be strained before serving to eliminate the curds. Enjoy!!!
