PHENOMINAL!!! This is, by far, the best spin/artichoke dip I have ever tasted, and I get it at restaurants whenever I see it on the menu. It is rich, creamy and very flavorful. I was not stingy with the garlic, and added some fresh ground black pepper as well. I also added about 1/4 cup of sour cream to make it super smooth and creamy. At the last minute I threw in some of the shredded monteray jack cheese as well (I used that instead of mozzarella), and I think that helped to hold the dip together a little after it was heated. I also threw in some diced red bell pepper for some color. I heated it and served it in a large sour dough bread bowl. It was a hit!!! I will be making this recipe A LOT more often. This one's a classic.
