SO GOOD. I reduced butter to 1 stick, reduced brown sugar to 1 cup. Still awesome.

So yummy. I added 1/2 cup of millet for crunch. I skipped the pecans and coconut because I don't like them. I was too lazy to grate carrots, so I skipped those!

Pumpkin Gingerbread

I substituted 1/2 cup of applesauce for 1/2 of the oil, used 1 1/2 cups whole wheat flour with 2 cups all purpose flour, and reduced the sugar by 1/2 cup. Delicious! Moist and sweet, despite my changes.

Harvest Pork Stew

This had good flavor! I used fresh cubed squash, leeks instead of onion. It seemed like it was missing something, though. Maybe I will add a chopped bitter green next time.

Sausage 'N' Apple Baked Squash

I used another small winter squash and it worked well. I used mild Italian turkey sausage. I skipped the onion and sage. It tasted great anyway!

Soooo easy to make. Tasted great even without the onion and cayenne. Even my picky toddler ate some. Used the leftovers for lunch in a taco.

Blueberry Oatmeal Coffee Cake

I liked the way this turned out! Yummy and healthy! I made a few substitutions: 1 cup whole wheat flour, applesauce instead of oil, yogurt instead of sour cream, frozen mixed berries (raspberries, blackberries, blueberries). It was moist and not too sweet. Next time I will put more of the topping on it, it was a little too sparse even though I only used a 9X9 glass dish. My one-year-old liked it so much that she actually sobbed when I told her it was gone!
