Middle Eastern Rice with Black Beans and Chickpeas

We used soy crumbles in place of meat to have a veggi main course. This is a fabulous tasting meal! But, there is no reason to double the amount of liquid used for the rice. Parsley and cilantro make this recipe - don't leave them out! Add the Persian Cucumber Yogurt Sauce as a side and you won't be sorry!

The Best Thai Coconut Soup

We loved this soup! We made it a vegetarian version: Replaced shrimp with firm tofu and chicken broth with vegetable. Added sliced baby bok choy to the bowls. The heat was too light. Next time I will double the chili and add rice to the bowls before serving to make it more of a meal.

Sweet Potato, Carrot, Apple, and Red Lentil Soup

This is outstanding! I made it as written. But, added fresh spinach before serving, topped with yogurt, served with salad and whole grain bread. Make it. You'll love it!

Jay's Signature Pizza Crust

Turned out great! 15 serving recipe made two large thin-crust pizzas. I used a food processor with pastry blade to mix the dough which made mixing much easier.

Thai Curry Soup

Broccoli Chicken Divan

Added some sour cream, fried onions and two cloves of diced garlic. Replaced the meat with soy chunks and the soup with cream of mushroom. We loved it!

I like this a lot! But, I advise going easy with the hot sauce. You can always add more... you can't take it out however! I used 1/4 of the amount called for and it was plenty hot for me.
