Broccoli Chicken Divan

Added some sour cream, fried onions and two cloves of diced garlic. Replaced the meat with soy chunks and the soup with cream of mushroom. We loved it!

Hot and Sour Cabbage Soup

I like this a lot! But, I advise going easy with the hot sauce. You can always add more... you can't take it out however! I used 1/4 of the amount called for and it was plenty hot for me.

Cabbage Rolls II

I used soy crumbles in place of the beef.We like our food with more spice. Perhaps sour kraut and/or Old Bay would do the trick! Like others, I doubled the sauce to have enough.

Rich and Simple French Onion Soup

You MUST brown/caramelize the onions! It takes longer (20 mins) but, it brings out the sweetness of the onions. You'll love it!

Spinach and Leek White Bean Soup

Egg Salad Sandwiches

It needs some crunch! A 1/2 tablespoon/sandwich of chopped fresh onion and celery improved it for us. Used 1/2 the mayo. One egg/sandwich is plenty for us. We like the flavor a lot.

Chicken Enchiladas I

Made this vegetarian. Substituted enchilada for taco sauce used veggie chicken, added cilantro and 1 jalapeno... zippy but not hot. We loved this dish!
