Quick Chicken Piccata

This is a relatively easy recipe with super duper flavor. Your diners will be amazed. We had it with steamed broccoli and onions, mashed potatoes and Chef John's mushroom gravey. Fantastic!

Mango Chutney

I made 30 cups and found that 1/2 the cooking time was fine. One seeded jalapeño produced very little zip. Maybe red pepper flakes would work better.

Tomato Cucumber Salad

Seeded the tomatoes, added a drizzle of olive oil, fresh parsley & basil. No lemons in this part of the world, replaced lemon with lime. This is a very fresh-tasting salad. A nice change from vinegar-based dressings.

Persian Cucumber Yogurt (Maast-o Khiar)

Grated the cucumber as others suggested and substituted a tablespoon of chopped red onion for the shallot. We loved it with the "Middle Eastern Rice with Black Beans" on this site.

Beet Salad with Goat Cheese

Placed the sliced beets in a plastic bag with the dressing for about 2hrs before serving and used feta cheese. Otherwise, I followed the recipe. Fantastic!

French Onion Soup I

Loved it! Changes: 3 cups of yellow onions, carmelize and you don't need any sugar, used vegetable broth, toasted baguette slices in toaster, topped floating toast with grated swiss - melted well without the oven. Only used 1 cup of water and it was perfect for 2 large servings.

Super duper! Didn't change a thing. But, used fresh garlic & ginger. I'm not a sweet-lover and I thought this was very good... made a double helping just for myself! p.s. found a sweet chili sauce recipe online and made my own...real easy.

Note: paragraph two... do not add the sauce to the eggs! You won't like it. Otherwise, I doubled sauce. Added ginger & peanut butter as others suggested. Broccoli & mushrooms worked well too.

Lentils and Rice with Fried Onions (Mujadarrah)

This is great! Used about 1/2 of a large onion per person. I used vegetable broth for the rice/lentils with some cumin. Added the Cucumber Slices with Dill recipe on the site as a compliment - perfect combo. Check out the "how to" for the caramelized onion prep. Added a little cinnamon here. Pretty easy to make. Took a little longer for me since I used brown rice - about 50 mins.

1/2 the sweetner and add a little salt. The cucumber volume will half after 2 hrs. We loved it! It went super well with the Lentil & Rice with Fried Onions on the site.

Like some others, I halved the sugar and used Stevia. Used a quarter small onion and blended all in the food processor. Very flavorful!

African Peanut Soup

Great soup! Changes: Doubled spices and rice. Added rice with the tomatoes to allow for the longer cooking of brown rice. added 1/4 cup of salsa & crushed peanuts. Topped with juice from 1/4 lime, sour cream and cilantro. Served with baguettes. Really, really tasty!
