Spicy Chicken Thai Soup

Made this vegetarian using Extra firm tofu. I have not concocted a veggie fish sauce. So, I had to go with just soy sauce. It changes the recipe I know. But we really liked it anyway.

Chicken and Gnocchi Soup

Substituted no fat Greek yogurt at the very end for the half-n-half. Let the soup cool some, add the spinach to cool it a bit more and stir in the yogurt. Very good!

Gnocchi with Sage-Butter Sauce

Very tasty, quick and easy. I added chopped parsley to color it up a bit. I'd also suggest that the portions in the recipe are quite large, unless you're a big eater. Half of the quantity was fine for us!

Tzatziki Sauce

I love this! Peel, cut lengthwise and scrape out the seed of the cucumber. Then, then grate the cucumber and squeeze it in your hands over the sink taking out most of the water. Stir it into the yogurt. It may not be as thick as the Greek yogurt mixture. But, it's a lot faster and you'll like just the same!

Vegetarian Korma

Super-duper! But, I made some changes based on the reviews here. Pre-boiled the potatoes for 10 mins and it should have been 15. Added tsp Gram Marsala & 1/2 tsp of tumeric and a cup of cauliflower. Used 1 can of coconut milk in place of the cream and a small can of peas. Mixed most of a bunch of cilantro with the milk reserved the rest for garnish. Served over Jasmin rice. Wowza!

Jay's Jerk Chicken

If you like it really spicy, use the habañero. One jalapeño was pretty mild. I marinated it 24hrs and it was juicy-tasty on skeewers with Jamaican rice and grilled veggies.

Beef Stew VI

Quadrupled corn starch. Maybe I will cook without the lid next time to thicken the broth. Nevertheless, we really enjoyed this stew. We made it vegetarian and that may have effected the "thickness". Used tofu chunks and mushrooms in place of the beef. Hey, try it, you'll like it!

Vegetarians listen up! I made this with vegetable broth. No matter, it was super. My vegetarian wife and I (the meat eater) loved it on mashed potatoes! If you want thicker gravy, use less broth.

Roasted Beets with Feta

We like this a lot. However, our beets were softball-sized and took 3hrs to soften to the center. I recommend smaller beets!
