Mom's Legendary Stuffed Hamburgers

I guess I was expecting more. They weren't bad, just not anything exceptional. I can put onions and bacon on top of my burger with A LOT less work. I didn't like the flavor of the onion soup mix in this at all. And I use onion soup mix in other recipes. Everyone agreed these were just ok. I made 5 huge balls of burger, then seperated in halves, it occured to me that I could have left them whole and stuck in my thumb and hollow out a "pocket" to fill then seal, with less effort. Just an idea.

Campfire Reubens

I have never liked the rye bread that local eateries use for reubens. The pumpernickel is why I tried this. I bought deli corned and roast beef, turkey and ham(kids are picky). Also used swiss, american, and pepperjack cheeses. I laid everything out on table and let each assemble their own to their liking. I made mine as stated in the recipe. Except we all used ff thousand island. This was excellent!! My fiance had never tried a reuben and fell in love with this. He tried one later at a local eatery and HATED it!! I swear its the rye... yuck. Anyway, we have made these on the grill, campfire, and in the oven. I dont check the time really, just check the food. The thicker ones were still cold in the middle when the kids sandwiches were done. We will definately keep making this one!!

Beef and Cheese Ball

I make a version of this every year, but never thought of adding green peppers. I used other suggestions and cut back on worchestershire sauce and used liguid smoke instead of onion juice. Also added a little garlic powder. I meant to roll it in bacon pieces but forgot to. I put a few drops of orange food coloring in it for a Halloween Party and shaped it like a pumpkin. It was excellent. I will use this from now on.

Mock Chicken Fried Steak

Great recipe! one thing i hate about "real" Chicken Fried Steak is the chewyness, This melts in your mouth. Great for saving on money too. Thanks! I always bake mine instead of frying. I have tried many alterations but the original recipe is great as is.

Southern Eggs and Biscuits

I remember my dad making some kind of gravy with diced eggs in it, but I couldnt put my finger on it. This was pretty close to it. Absolutely delish as is. Cant wait to make it again. Everyone loved it. I did cheat and used canned buttermilk biscuits. I made it for supper, and the leftovers were great for breakfast in the morning. Thanks for the recipe. Update, I have made this a few more times (we cant get enough)! I forgot to put the cheese in last time and didn't even miss it.

Bread in a Bag

My 9 yr old made this to go with dinner. It was very tasty. He added some garlic powder to the mix and we had garlic bread! It was very dense and heavy in the middle, don't know if it was supposed to be but it was still pretty good.

Oven-Baked Country Fries

I thought these were excellent. I used Panko crumbs instead of regular bread crumbs for an even crispier texture. Also added garlic powder, and adjusted the other spices to my families preference. A great change from regular potato wedges. I am going to try this breading on chicken and fish. I was snacking on the cold wedges out of the fridge the next day.

Mexican Mole Poblano Inspired Chili

I was looking for a chili recipe that had both chocolate and cinnamon in the ingredients list. This is the one I chose. I heard that these ingredients were the secret to winning a chili cookoff. WELL, lets just say I'll never make a recipe to serve (especially to be judged) without giving it a trial run first. The people were commenting on the flavor while taste-testing my chili (and not in a good way). Over all, the recipe was a flop. People were warning others not to even try this one. So glad it was anonymous! I dumped it when I got home.

Joanne's Super Hero Sandwich

This is a GREAT sandwich! I made it for the Super Bowl and my family and friends devoured it. It is very accomodating to different meats cheeses and veggies. I omitted the mushrooms and used roasted red pepper flavored olives, added a little chopped onion and chopped pimento peppers to the sauce. This did work well in two oval shaped crusty breads. I couldnt find a round one. I will use this often.

Texas Caviar I

This was excellent. I served it for my 4th of July party and everyone loved it. I love all the fresh ingredients! I also just add enough italian dressing to coat. I have added corn, it's good either way. I use multi colored peppers. I am a BIG fan of chips and salsa, and I haven't bought salsa again after I discovered this! I often whip this up to take to work or serve along side supper, its a good way to get your veggies. I have made it with just black eyed peas,tomato,sweet onion,jalapeno, and dressing, cause thats all I had and I was craving this! It tasted great like that too. Great recipe!!

Yellow Squash Patties

This dish was excellent! My mom, fiance, and kids who hate squash loved this. I followed the recipe aside from using zuccini and squash together. I didnt have corn meal so I used bread crumbs instead. Everyone raved! Of course I didnt tell them until they ate it what they were. Just called them fried cakes. I am going to try to bake them today. Thanks for the recipe!

Cool Whipped Frosting

I thought this tasted very good. Not exactly what I was looking for. I wanted a replacement for the whipped type frosting that the deli makes. After reading a review that stated it was like Walmarts I thought I had found it. But alas I'll keep looking. This would be a great topping for angelfood cake. I used it on my sons birthday cake. The frosting held up well, but the icing writing I used spread out into huge blobs in the frosting. I'll use it again, just not on birthday cake that requires decoration.

Apple-Cinnamon Oatmeal Mix

This is pretty good, way better and healthier than store bought stuff. I sometimes add ground flax and wheat germ if I have it on hand. Not sure how much, I just eyeball it. I have made different varieties by using dried blueberries, cranberries, apricots, etc. Just omit the apple(or keep it for a neat flavor). We also omit the apple and add fresh fruit (bananas, peaches, blueberries)to our bowls before we microwave it with a little bit of water. Great idea for adding health without adding the extras sodium and preservatives.

Seven Layer Tortilla Pie

My family loves this recipe. Being different from the norm when it comes to Mexican food night in our house made this fun. Depending how many we have to feed I sometimes use 10 or 12 inch tortillas and add extra ingredients. I've changed the ingredients around some too,I use refried beans instead of mashing pintos to save time. I add spices, such as taco seasoning and cumin and garlic to both the black bean and refried bean mix. Also chop up an avacodo and add to one of the mixes. I have added a layer of beef or chicken before, but really cant tell its there. My man suggested using tortilla chips or doritos in place of the soft shells for some texture. (I'm not sure they would still be crunchy at the end though). And I always use reduced or ff ingredients if available. Still tastes great.

Light Sweet Potato Casserole

This didn't hit the spot for the "regular" sweet potato casserole lovers. It wasn't bad per se, maybe could of used a little more sugar. I ended up toasting some pecans with butter and brown sugar and putting that on top. A few people scooped up the topping to add to their plates. I ended up throwing most of it out. Very Unfortunate.

Teriyaki Chicken for the Busy Cook

This was an "OK" recipe. It wasn't extravegant, but it wasn't bad at all. I didn't really taste the orange soda at all. I made it a second time and added some teriyaki sauce and some garlic and ginger. Still just OK.The best part is,this dish is very quick and easy to put together if you use already cut up pieces, or boneless skinless breast or thighs.

Delicious Ham and Potato Soup

This is excellent! I made a bunch to freeze for quick meals, potatoes do not freeze well! I do not peel my potatoes. Sometimes I add extra stuff spices, veggies, whatever I have on hand.
