Caramel Candies

This was my first time making caramel, and the results were outstanding! I used 1 tsp vanilla extract and 1 tsp french vanilla extract, most because I really like the french vanilla flavor. I cooked the caramel to 240. Be sure to line your dish with parchment paper - the block of caramel will lift out without any problem. The caramel is chewy (but not sticky) and can be easily cut with a sharp hot knife. I can't wait to experiment with flavors and add-ins!

Buffalo Chicken Dip

Excellent. Instead of canned chicken (yuck!), I used fresh boneless/skinless chicken breasts and poached them in chicken broth. I also ground the chicken in the food processor afterward. Will definitely make again!

Basic Brine for Smoking Meat

I like to experiment with different spices, but overall this is an excellent brine. I never put a pork loin in the smoker without it!

Ramen Coleslaw

Excellent recipe. I used rice vinegar and sesame oil for a better flavor. I also added 1.5 tsp fresh grated ginger to the dressing, and increased the amount of dressing by 50%. Also, in order to save time, I purchased bagged coleslaw. Will certainly make this recipe again!!

Italian Wedding Cake Martini

I didn't have any creme de cacao on hand, so I used Godiva white chocolate liqueur. Absolutely awesome! The drink is very strong, so I might cut back on the vodka a bit next time.

Roasted Garlic Scalloped Potatoes

The recipe calls for creamy potato soup -- NOT cream of potato. The soup is Campbell's select, and blends quite nicely in the blender. I added additional roasted garlic and cream -- delicious!!
