Potato Pancakes I
Great traditional recipe. I made them for my son for dinner today along with homemade applesauce, bacon, and homemade dinner rolls. We like lots of onion, so I increased the onion. Green onion would be good. I used crisco because I read that it fries better, but I think I'll use the canola next time. For those of you who serve this with applesauce; I can't stres enough how much better with homemade, and applesauce is SO easy to make. Your kids will love you for it!

Chicken Pot Pie VIII
Oh.. this is SO good!!! I really wanted a made-from-scratch chicken pie (although I admit I cheated with store-bought pie crust that come in a roll). The only thing I did different was added about a cup of frozen peas. This was down home delicious!

Cranberry Sauce
As the others said, I will never buy cranberry sauce in a can again. This is simple and delicious. I was worried that the orange juice would be overpowering, but it absolutely was not. My advice is to use a potato masher once the cranberries are soft enough and let it stand in the refrigerator overnight before serving. I like my foods plain an simple without all the fancy foo foo. This sauce is simply delicious!
