Lentil Soup

I absolutely loved this soup. It was refreshing and healthy. I did make some of the modifications suggested by other reviewers. I used Balsamic vinegar, added a little lemon juice and doubled the spinach. I doubled the recipe before I checked to make sure I had enough lentils. I was short a cup of lentils so I added a can of cannelini beans at the same time I added the spinach and it came out awsome. I think this would even be good with kielbassi or sausage chopped up in it. Thanks for this recipe - I will make it again.

Teriyaki Chicken

I made this recipe exactly as written and it came out delicious. The marinade was excellent. I even used low-sodium soy sauce. I also love that this is so easy to make. I did have to bake it for almost 1 1/2 hrs and turn it up to 400 degrees, but my husband said it was the best whole chicken I've ever made. Thanks for sharing the recipe.

Spaghetti Squash Casserole

I am giving this recipe five stars. This was the most delicious spaghetti squash I have ever tasted and it was easy to make. My husband was totally impressed. I didn't have any sour cream so I substituted heavy cream. It came out incredible (although I ruined the healthy aspect by doing this). Yum - It was even better than fettucini alfredo.

Kyle's Favorite Beef Stew

This stew came out delicious, but I did have to make some modifications. I didn't have any onion soup mix so I substituted beef boullion and onion powder and added a little more salt. I also substituted two cans of sliced mushrooms for fresh. It looked like it was missing green veggies so I threw in some frozen peas and green beans on the top layer. I also added a couple bay leaves as suggested by another reviewer. When it was done, it seemed to be missing something so I threw in a pinch of thyme, margoram and oregano and that seemed to do the trick. This was the perfect comfort food for a bitter cold day. Thanks for the recipe.

Cottage Cheese Potatoes

The potatos were okay, but I did add extra sharp shredded cheddar cheese and salt/pepper and it still needed more flavor. I cubed and boiled the potatos, but I guess I didn't boil them long enough because I ended up having to bake the potatos for 1 hr 15 min. I am giving this four stars because the potatos were much better the next day being reheated. If I make this again, I will add more seasoning.

Chicken Pot Pie VIII

I love this recipe and so does my husband. I do add some frozen peas and green beans to the mix and usually use pre-made Pilsbury pie shells to save time and it always turns out perfect. I agree that there is always extra filling so you can cut back a little on the ingredients. I also add a little fresh parsley, marjoram and thyme and simmer the potatos, celery and carrots in the sauce for bit prior to placing filling in the shell. I use a deep-pie dish in order to use more filling and still have leftovers. I did have to bake a little longer and adjust temperature. I bake at 400 for the first 15 min. then turn down to 375 and bake for another 35 min. and the veggies come out perfectly tender. I will make this over and over and probably try it with beef and maybe even baby shrimp and scallops.

Jewish Apple Cake II

This recipe is out of this world. I have made it several times now. The first time, I followed the recipe exactly. After reading reviews, I decided to use more apples the next times and it turned out even better and moister. I will make this over and over again!

Linguini with White Clam Sauce

I like this recipe because it is quick and impressive to throw together for company as long as you have all the ingredients prepped and ready to go. I am giving it 4 stars because I did have to tweak it to give it a little more flavor as it was a little bland for our taste. I added freshly squeezed lemon juice and a little more wine. I also doubled the garlic and added cherry stone clams that I steamed in wine in addition to the canned clams. I think next time I will also add some hot pepper flakes. I love the fact that this recipe doesn't use butter. However, it definitely needs a little more seasoning to make up for it. I will continue using this recipe as a guide.

Apple Walnut Salad with Cranberry Vinaigrette

Yumm - I made this salad for Christmas dinner and it was a big hit with my guests. I got lots of compliments on the dressing. I followed the advice of other reviewers and cut way back on the onion and also glazed the walnuts prior to toasting. I also sprinkled Craisins on the individually plated salads prior to serving. This one is definitely a keeper.

Cranberry Waldorf

I was looking for a healthy new way to use fresh cranberries and tried this recipe. I didn't have walnuts so I substituted almonds which worked well. I also substituted Splenda for the sugar and it was a little too sweet for my taste. I will definitely make this recipe again, but will leave out the sugar/Splenda altogether or use plain yogurt instead of Vanilla. My husband loved it and actually had leftovers for dessert to calm his sweet craving (in a healthier way)! This is definitely a keeper.
