Amish Slaw

I really loved this! I was looking for a non-mayo cole slaw recipe and this was perfect. However, I used only 1/2 cup of sugar because I don't like it too sweet. And I added thinly sliced red peppers, onion and celery. LOOOVE!!

Baked Coconut Shrimp with Spicy Dipping Sauce

This was a good alternative to the unhealthy fried version. I kept longing for that crispy texture though. The panko and coconut only got a little crispy and did not brown at all...but I didn't want to overcook the shrimp. The sauce is good but thick...I thinned it out with a little warm water.

Turkey and Quinoa Meatloaf

This was sooooo good!! It was moist and flavorful. My husband said it was the best meatloaf he's had and my young kids liked it too. I didn't add the hot sauce because of my kids but just perfect, thanks!

Royal Icing I

I thought 4 egg whites was too much -- I used 2 egg whites and came out great. It was perfect for our gingerbread house and held the pieces up well. Doesn't taste good though - good for something like a gingerbread house where you just need it to be more strong than tasty.

Gingerbread Cookie Frosting

DEFINITELY WAAAAY too much milk!! I had to put a total of 4 cups of sugar to make it the right consistency. It had no flavor other than powder sugar - I added 1 tsp lemon extract and it was better - but still not that great. Would not recommend.

Roasted Brussels Sprouts

Soooo simple yet absolutely delicious! My sprouts were ready in 25 minutes at 400 degrees. They are definitely best immediately out of the oven. Once they start cooling down, they are not as crispy and good.

Brown Rice, Broccoli, Cheese and Walnut Surprise

I really loved this!!! My husband and kids loved it too! I made mine more of a casserole by mixing in all the ingredients (added diced cooked chicken too), topping it with extra cheese and toasted walnuts then baking until hot and bubbly. It was truly delicious and a comfort type of food (yet SO healthy!). Also, I used regular brown rice instead of instant. The toasted walnuts really made this dish for me. Going in my permanent folder!!

Ramen Noodle Soup

This was REALLY good and tastes even better than the packaged stuff! I added tiny diced carrots, celery, onions and red bell pepper, garlic and ginger and simmered about 10-15 min then added the soy sauce, 1 raw egg, thinly sliced shitake mushrooms and the noodles for 4 minutes. I didn't have the chili or sesame oils and it was still great. Will make again!!!!

Vegetarian Brown Rice Casserole

I think how good this tastes will depend on the canned lentil soup you use. I used Amy's Organic Lentils w/ Vegetables and the soup was not good to start so the overall casserole was just okay. I used fresh red bell peppers instead of canned and added diced onions and 1 crushed garlic too. Also, I baked it at 350 for 30 minutes instead of nuking it. I think I'll try it again but making my own lentil soup (which I know defeats the purpose of this quick recipe!).

Indian Vegetable Rice

This was pretty good. I agree it's a little bland but I understand it's usually accompanied by a saucy entree so it probably is a perfect side dish. On it's own would be bland. I'm thinking of adding more spices next time and mixing in the vegetables AFTER the rice is done cooking. I didn't like how the veggies turned a dull brownish color after cooking - I'd prefer a brighter color. Overall, would make again.
