Simply Traditional Lasagna

I made this for my boyfriend, who LOVED it. He's a bit of a picky eater, but he devoured this. When I told him I could freeze the leftovers, he refused, and wanted to eat it breakfast lunch and dinner til it was gone! I omitted the olives though. I had to cook mine for longer than the recommended time, and it took me quite a bit longer than 20 min to prep. But it's definitely worth it!

Dessert Crepes

This is a great recipe! I made crepes for the first time, following the recipe exactly, and topping them with butter and cinnamon sugar. They were GREAT! I will definitely be making these again.

Lentil Soup III

Very tasty. I added carrots, onion, and frozen chopped spinach, and it came out great! I did need to add quite a bit of extra liquid though, which meant I had a huge amount of soup. It freezes and reheats just fine.

Vietnamese Style Vegetarian Curry Soup

Good, but I made a lot of revisions to it to make it more like my mom's recipe :) I didn't use any shallots, skipped the kefir leaf, used a red bell pepper instead of green, used 4 carrots intead of 2, 4c chicken broth, no water, no fish sauce or pepper flakes, 3 bay leaves instead of 1, 4 medium potatoes and 1 sweet potato instead of the 8 small ones, and 2 cans coconut milk. I also added some salt and some Sriracha to taste. Delicious! My boyfriend is a huge fan.

Quick and Easy Thai Style Coleslaw

Pretty tasty, but there's way too much rice wine vinegar in my opinion. Start out with 2Tbsp and keep adding as needed.

Zucchini Ribbons With Goat Cheese

The recipe itself is okay, but I just found it to be a little bland (spicy, but not enough other flavor) and the texture of the zucchini ribbons was a little slimy for me. And I felt a little wasteful discarding the middle part.

Slow Cooker Split Pea Sausage Soup

Very good. I used a 2.5 quart crock pot and halved the recipe but it was overflowing. I substituted ham for the smoked sausage. IT ended up a little too overcooked (all the peas turned to mush) so I would turn down the temp a little.

Baked Kale Chips

Really tasty, and really easy. You can add any seasonings you want (I added a bit of seasoning salt and a bit of grated parmesan). I couldn't get all of the kale pieces to cook evenly but I didn't mind to much. My boyfriend didn't like them but I will definitely be making them again.

Cod with Italian Crumb Topping

This is really good and really easy. I followed other reviewer's suggestions to use fat free mayo instead of olive oil and eggwhite, and used Italian breadcrumbs instead of the breadcrumb/cornmeal combo. I added a little smoked paprika and salt too. I used frozen hake from Costco, baked at 350 for awhile, then broiled to make the outside nice and crispy.

Red Onion and Goat Cheese Tart

I'm vegetarian, but my fiance eats meat, and it's hard to make a single meal item that we both really enjoy. I really love this tart, even though I made a lot of revisions--many that other members suggested and a few of my own. This recipe as is wouldn't quite work. I only needed 2 onions, and even cutting them into 8th's wasn't small enough to get them to really caramelize in 15 minutes. I would follow another member's suggestion to slice them thinly--it makes it easier to caramelize and also to eat. I used more than the listed amount goat cheese and it was great... and I also added some cheddar (suggested by another member) but I probably only use goat cheese next time. I also threw in some thyme, oregano, and Spike seasoning, as well as a generous amount of salt and pepper. I also cooked it for about 35 minutes and then let it sit and cool before serving. Delicious.
