Amazing Pork Tenderloin in the Slow Cooker

I've made this 2x now. My kids & Hubby rave about this meal! This is one of the few meals BOTH my 11-yr-old & 5-yr-old clean their plates!! This is a keeper! Yum! I made it with the PORK LOIN. Omitted the soy sauce... didn't need it. Once I cooked at high for about 3 hrs. Another time I cooked low for about 5. Came out perfect both times. When the loin is fully cooked, take it out, slice it into individual serving slices. While it's out, I add 2 tbsp flour to the sauce in the crockpot and stir/whisk. It makes a nice, thick gravy. I add the slices back into the crockpot to stay warm until serving. I served it with oven roasted new potatoes and carrots. My kids love this dinner! Hallelujah! It's rare to find something they both like. :-)

Slow Cooker Oats

I did slight variation of this ... added 4 cups water to my 1 c steel cut oats. 3 TBS of ground flaxseed. 1 1/2 tsp cinnamon. 2 chopped organic gala apples. Added raisins after cooking. sprayed the crockpot with pam spray just in case to prevent sticking. after 8 hrs, oatmeal was perfect. we added some sweetener, me: Truvia; hubs: agave nectar. It was so filling and yummy! had leftovers for tomorrow morning's bfast!

Curry Pumpkin Soup

Extremely flavorful! We thoroughly enjoyed this! Loved having the curry taste so I added slightly more than the recipe called for. I found low sodium veg broth - so yummy! Cooking this recipe made the house smell so wonderful! I also finely chopped a yellow onion and added that to the curry mix - cooked the onion until soft. We love having onion in soups. Also, subbed Light organic coconut milk in place of 1/2 & 1/2. I also used brown sugar instead of conventional white sugar. Mmmm! Served with a nice salad and warm artisan bread! Hubs can't wait for leftovers tonight! This is on the fall recipe dinner rotation now! :)
