Pancakes I

Let me just start by saying, I am not a pancake fan. That bring said, I just ate 4 of these! They were so tasty and simple! Made the recipe exactly and let batter chill while I cleaned the kitchen. Will for sure be making this again...and again. Thanks for sharing!

Peanut Butter Cookies IV

Rave reviews on these cookies from all over :) I doubled the recipe and sent cookies to my neighbors. Everybody loved them. I over-cooked a batch in the middle but scaled back my time to just over 10 minutes per batch and they were perfect. Thank you for sharing!

Homemade Flour Tortillas

So after using this recipe I have made a decision: I am buying a tortilla press! These were AMAZING! I had to use margarine instead of lard but I will try lard at some point too. This recipe was so easy that I had my 11 yr old daughter help me cook them. I rolled and she cooked. So simple! And with a press I imagine they will come out more even around the edges. Will never buy store bought tortillas again! Thank you so much for sharing!

Peach Cobbler II

Having never made peach cobbler before I wasn't sure what to expect. This was AMAZING! I had to borrow some sugar from my neighbor so I took her a piece and she loved it! The kids love it, the husband loves it and I really enjoyed it too. The only thing I might do next time is lower the sugar even further. Maybe 3/4 of a cup over the peaches. I only had 5 but they were larger so they worked really well. Excellent and will make again, probably tomorrow! **Note** I ended up using this recipe because the author said it was her grandmother's recipe. So far I can truly say Grandma's recipes are the best!

Broccoli Cheese Soup V

My family LOVED this one! I also did the 1lb processed cheese food and 3/4 lb cheddar. Excellent combination! Instead of using canned chicken broth I used 5 1/4 cups homemade chicken stock. Turned out AMAZING!

Crazy Cake

This is the second time I have made this cake and it is my new favorite! For the first one I used margarine instead of vegetable oil because I didn't have any. This time I used applesauce instead and it is so good! Both are perfect substitutes! Thank you so much for sharing this AWESOME recipe!!!

Southwest Chicken

This was GREAT! I used medium salsa instead of diced tomatoes and was a little afraid that the spice would be too much for my husband so I added more corn and another can of beans. Instead of 4 whole chicken breasts I used two chicken breasts and cut them into smaller pieces to make it go farther. With all the extras it made a perfect amount for dinner for 4 and lunch today! I also made a batch of white rice and served this with tortillas. This recipe makes WONDERFUL burritos! Thank you so much for sharing, we will be having this one again...soon!

Sausage Gravy III

This recipe is perfect! I am making biscuits and gravy for dinner (using J.P.'s Big Daddy Biscuits, which can easily be found here). This is also a great, easy recipe for kielbasa which is the first thing I used this recipe for. Thank you so much for sharing!

Absolutely wonderful! I have never made biscuits before but now I will NEVER buy them pre-made again! These were so tasty that I had to make two batches because my kids came in and ate the first batch. They are great plain or with butter and jam but I made them for biscuits and gravy. I highly recommend this recipe!

Freeze-Easy Chocolate Shake

This tasted just like an IN-N-OUT shake! I used 1/2 cup of 2% milk and two huge scoops of vanilla ice cream (all I had) then a tablespoon of chcolate syrup. Yum!

Quick Black Beans and Rice

So tasty! I doubled the recipe and instead of the oregano I used cumin, chili powder and a little salt. I also used fresh garlic sauteed with the onion. I premade the rice and mixed everything together after it was ready. Will definitely make this again!

Six Can Chicken Tortilla Soup

Unfortunately due to the spiciness of this one, I was the only one that really liked it tonight. I am rating it 5 stars because I loved it and I am sure that the next time I make it I am using plain Jane diced tomatoes for the rest of the family. I boiled a whole chicken to make the broth with half an onion and 4 garlic cloves diced. Then I had my daughter help me take the meat off the bone and had my other daughter add the ingredients. We also used fresh cilantro and chili powder and cream of chicken soup like others had suggested. Served over tortilla chips, terrific recipe and easily adaptable!

Broccoli, Rice, Cheese, and Chicken Casserole

This has been thrown into the rotation and made almost weekly. I do some variations on it though. I NEVER use canned chicken meat. I do not like the flavor. I use either a whole chicken or chicken pieces, boiled and meat taken from the bone. I also use peas and carrots instead of broccoli sometimes too. This is a great and easy recipe that the whole family loves!

Twice Baked Potatoes I

I am lucky and have a microwave that has a baked potato setting! The potatoes took all of 10 minutes to cook. I used a couple tablespoons of sour cream and they went fast! The kids loved them and so did the grown-ups! Will be making these again!

Slow-Cooked Chili

Chicken Enchilada Casserole I

I changed the recipe a bit also. I used sour cream instead of the chicken broth in order to maybe thicken it up a bit. It was still a bit wet and the cream made it really rich. I also substituted Cream of Mushroom for Cream of Celery. The kids loved it and the grown-ups each had two bowls. Next time no sour cream, just on top :)
