Kay's Spaghetti and Lasagna Sauce

I was nervous to try to make homemade sauce for the first time, but I will never make anything else except for this! This recipe made enough for 3 meals for my family of 4. I always have us eat one batch that night and then I portion the other two in individual foodsaver bags and freeze them (you can boil those bags). I just use one large onion and one pepper, and that is all I can seem to get passed my children. I've only used this as spaghetti sauce, but I'm sure it would be great in lasagna too. Trust me, you really should try this!

Guacamole

THE best! The is honestly the only thing I put raw onions in (I like them cooked). This is wonderful with raw red onions, and also try it with raw shucked corn from the cob. Yum yum yum! Note: do add the dash (or four) of cayenne pepper - great with it!

Steak on a Stick

My kids love this!! Fun to eat, and fast to cook (this is my favorite part). If you can't get flank steak you can try cheap round steak and slice it the same - against the grain.

To Die For Blueberry Muffins

I think this is one of the best blueberry muffin recipies! I live in high elevation, and I don't change a thing. I don't have a large muffin pan and this makes about 10 normal sized muffins for me, filling each about 2/3 full with batter.

Mouse's Macaroni and Cheese

I only did 1/4 tsp of Black pepper which was just right for my kids, and I used the large-sized elbow noodles. I also left off the bread crumbs - my kids just don't like mac and cheese with breadcrumbs. It was a huge success! We had this as a side dish with homemade chicken nuggets. Thank you for sharing a recipes that is sure to be a keeper with our family.

Cheddar Baked Chicken

Past the kid test in my house! Great flavor, served with a side of spicy ranch for dipping for me. Will definitely make again! Only change I made was I used Colby Jack instead of cheddar.

Fudge Puddles

Holy shnikies! I totally understand why this recipe has 5 stars. I left off the pecans but my husband said it probably would have be awesome with them. I normally hate semi-sweet chocolate but I make it a rule never to make major changes to a recipe before I try it word-for-word. Trust me, use both chocolates. I live at 6000 feet elevation and I didn't need to alter the recipe at all. THANK YOU!

I brought this to a church dinner, and it was the first to disappear! I didn't change a thing, and was excellent! I did follow another's tip and microwaved the frosting before pouring it on. Made it easy to spread around.

Slow Cooker Beef Stroganoff I

I love this! I let the cream cheese sit on my counter all day so when I come home it's just right to mix in. I also throw in a can of mushroom pieces, and I increase the stew meat to 1.5 pounds - we love our meat :)

Chicken Milano

Good grief! THis recipe is going to be the end of me! I am such a sucker for Sun Dried tomatoes. I didn't think the sauce would be enough for 8 oz of dry pasta, but it totally was. I didn't change a thing. Be sure to use fersh basil and not dried - don't ruin a great thing here. BTW: my seven year old and four y ear old liked this too!

Six Can Chicken Tortilla Soup

I was so happy to find this! I add a package of taco seasonings, and it was just right. I did follow the advice from others to be sure and drain and rinse the black beans before adding into the pot. I served with sour cream, shredded cheedar, and tortilla chips on the side. **If you don't want it very spicy, I'd start with half of a package of taco seasonings first.

Texas Ranch Potato Salad

I took this to my sister's bridal shower. No joke - I was instructed to email the recipe for this to everyone there. It was so good!!! My husband loves potatoes but hates how potato salad is always overcome with hard boiled eggs and mustard - not this one! Who doesn't love ranch and bacon! Thank you for sharing!

I used the large burrito tortillas, and doubled everything else. This makes fantastic leftovers! This is one of our favorites meals. Great to serve with white corn tortillas chips.
