Garlic Wine Chicken

This was good, I think the wine was a bit much for the amount of chicken. I added some onions to the recipe. Also make sure to season the chicken with salt and pepper, I like to add a good helping of salt and pepper to the flour, so they get coated, then add a little more for good measure in the pan, then it won't be bland.

Whiskey Chicken

I liked this. The whiskey and pineapple juice went very well together. I think the next time I make it I'll add a little more pepper and probably some more garlic, maybe some fresh garlic along with the powder.

Orange Honey Garlic Chicken

It was pretty good. Make sure that if you are using chicken breasts to use a digital probe thermometer to get the cooking time right. For me it was only about 20-30min. Came out nice and juicy - good flavor!

Zucchini Patties

This was good. I purged the zucchini with some salt and patted them dry before mixing. I needed to add a little more flour to the mix as well. It was good, but still needed a little something, I think next time I will use more pepper & garlic!

Chicken Scampi II

This dish is a bit heavy and fattening, however it tastes wonderful. I add a splash of crisp dry white wine (like a sav blanc) with the lemon to add a little more complexity to the flavours. This dish is great, be sure to have some bread on hand to capture some of the sauce!

Mom's Mozzarella Chicken for Drew

I've made this several times and really like this. I like to slice the onions rather than mince them, but I love onion. When I have fresh mozzarella around I'll take a ball and slice it up and then put it on top.

Chicken and Red Wine Sauce

YUM! This is an easy variation on the French favourite coq au vin. I've made this over 10x already and everyone who I've made it for has loved it. I like to add some onions and carrots to it, I sautee them first a little in some water and wine to get them to soften and then add them to this dish. I have yet to find someone who doesn't love this dish!
