Corn Tortillas

Giving 4 stars at this time as I just made two batches for enchiladas this evening. If the hold together while make the enchiladas, then this will definitely be a five star recipe. (I use the Texas Enchilada Sauce by Sue on this site. I get rave reviews with it!!!) ***UPDATE*** Changing to 5 Stars!! Just prepped the enchiladas and the tortilla held together wonderfully, better than store bought! I am so happy...I can do my enchiladas anytime now, no matter what country I am living in!!!

Chicken Pot Pie III

I used Cream of Mushroom instead of Potato and added 1 can of well drained mushrooms. I diced 1 potato and cooked it with the chicken in chicken broth. My husband loves it! Additional revision: I drop my frozen veggies in the broth for just a few seconds and add shredded cheese to the filling.

Texas Enchilada Sauce

A wonderful enchilada sauce! I doubled the recipe, used 1 cup with 2 cups chicken broth and 1 cup rice to make Mexican Rice. Turned out better than you find in restaurants! One guest stated that he does not eat the rice at Mexican restaurants, but this was excellent! I also used a hand blender and blended until smooth. We are not "chunky sytle" eaters. The rest of the sauce was frozen for future use! Truly a wonderful sauce.

Banana Empanadas

Try sprinkling lemon juice over the bananas. Lemon juice is used on fresh fruit to prevent it from turning unsavory colors.

Seasoned Oyster Crackers

I use a whole box of inexpensive saltines, add cayanne pepper, and creole seasoning vs the lemon pepper. Then I put the crackers in a 1 gallon container with an airtight lid . Whisk the rest together and pour over the crackers. Put the lid on tight and lay the container on its side and roll it around, let it sit for a few days rolling the container whenever I see it. Wonderful with Chili!!!! Good with Tuna or Chicken Salad as well!

Super Sausage Gravy

This how I have always made my gravy. I let the sausage and flour cook a little (stirring constantly to prevent flour from burning), somewhat like a roux, just till it has a light beige color. Adds lots of flavor! I have began using evaporated milk diluted with water in place of the milk. My husband loves it and says it is real close to what his Grandmother always made him!

Chicken Pot Pie II

I added more flour than recipe called for and added poultry seasoning. Did not have alot of flavor. I made my own crust with butter and that was the best part of this dis.

Chocolate Pecan Pie III

I have tried several different recipes for Chocolate Pecan Pie (my husband's favorite!!). This is by far the best recipe out there! The change I made to the recipe is I beat the eggs. Put a bit of the hot chocolate mixture in a separte bowl and whisk the eggs into the bowl of chocolate to prevent the eggs from cooking (the "scramble" effect), pour the remaining hot chocolate mixture into the bowl of chocolate/egg mixture, whisking constantly, until throughly mixed. Then I will add the vanilla and salt and pecans. I probably use more that 1 cup of pecans.
