About this Cook
I've enjoyed cooking since I worked in a restaurant in my teens.
My favorite things to cook
Breads of all types. I'm also beer brewer - guess I enjoy yeasts and grains. BBQ and grilling.
My favorite family cooking traditions
A French bread made with beer and an old salt risin' bread recipe passed to me by my father. We also have a Thanksgiving tradition of scalloped peanuts and onions and an interesting sweet potato casserole that we never fail to fix.

Dijon Grilled Pork Chops
Easy and flavorful. Didn't have apple juice so used orange. Could use beer or water as most of the flavor comes from other ingredients. Recipe says use 2/3 cup and save rest to baste, but unless you double it there won't be any extra. As written it is enough for 4-5 nice size chops. If chops are thick, piercing with fork may help infuse flavor. I only marinated for 3 hr but flavor was still great.

Scalloped Potatoes II
Just like mom's basic recipe except she didn't use the hotter oven to start. I add chopped onion and black pepper at each layer. Sometimes use seasoning salt. Easy to add cheese if desired. Also easy to scale down for two people.

Angela's Awesome Enchiladas
Similar to a recipe I've used from old Southern Living cookbook. Traditionally made with leftover Thanksgiving turkey. Instead of green onions I use chopped spinach or kale - adds the color and nutrition.
