Best Bruschetta Ever

I've tried a few bruschetta recipes and this is the one I will use from now on. Only changes/adjustments: I cut the bread, brushed it with oil, and toasted in the oven for apx. 10 minutes. I also used fresh basil and balsamic vinegar. I used shaved parm. and stuck it under the broiler to finish it off.

Monterey Chicken with Potatoes

I used Idaho potatoes (didn't have red), dried cilantro (didn't have fresh), and bottled lime juice and this recipe still came out great. Based on the other reviews, I turned the heat down to 350 when I put the chicken in and I think that kept it tender and moist. Next time I will leave the potatoes in longer to crisp them some and will cut down on the butter. But it's a great recipe and has definitely made it into our rotation!

Chicken and Asparagus Bundles

This was easy to make, looked beautiful, and was pretty tasty but I felt like it could definitely use more flavor. I kept thinking something was missing and I did add seasoning based on the other reviews. I think next time I will lessen the amount of chicken broth a little, add a little more lemon juice, and some white wine. I'm eating the leftovers with a little bit of creamy balsamic dressing and it's actually quite good, too!

Baked Pesto Chicken

I don't think I even made this right and it was SO easy and SO good. I had a lot of chicken so I used the entire package of pesto. I marinated it in a baking dish for about 30 min before baking it (I also lowered the heat a little because I used thinly sliced chicken). I cooked the chicken right in the baking dish (instead of a baking sheet) and it was amazingly tender, tasty, with a nice sauce. My husband - who is pickier than a 3 year old when it comes to food! - took one bite and said, "This chicken is really good!' Thank you so much for this recipe!!!

Chicken Pot Pie IX

This was a really good recipe - great flavor. I subbed potato for celery and next time I will cut down on the veggies a little and add more chicken. Great new addition to the menu.

Bacon and Tomato Cups

I used a 1/8c of mayo and a 1/8c of ranch dressing instead. I cut down on the onion and used grands flaky biscuitscut into quarters. These were the first to go at our New Year's party and I've shared the recipe already.

Chili I

I have never made chili and haven't had it in probably 15 years so I waited to review it until I got real chili eaters to taste it. RAVE REVIEWS. I almost made it in the slow cooker and I'm glad I didn't because of the amount of liquid. I cut the brown sugar to 1/8 c. based on other reviews and cut to two peppers but will use 4 next time. Only used 2 cans of beans in the hopes that my bean-hating husband would try it (no such luck). I cooked it longer than suggested just to make it a little thicker. If I'm being honest, I ate it for dinner, breakfast (yes, breakfast) and dinner again. Already sharing the recipe. Thank you!!!
