Strawberry Jam

I was looking for a jam recipe that I didn't have to use pectin in. I've been using this one for a while now and it's great! I now only use 3 cups of sugar which is plenty for our taste. The time to reach 220 degrees probably varies by stove but on mine it takes about 18 minutes once boiling. I have also made this recipe using two cups of crushed raspberries/blackberries along with two cups of mash strawberries, which I actually prefer.

Garlic Red Potatoes

These were good but I thought the lemon flavor was overpowering. I will make them again but without the lemon. And they definitely have to be cooked longer than called for.

Buttery Corn Bread

I used this recipe because I didn't have all the ingredients on hand for the corn bread recipe I always use. I thought this had a good flavor but it was a little drier than I'm used to. It was definitely better than the box corn bread mixes though.

Monkey Bread I

Three packages of biscuits were too many for the pan. Next time I'll try two cans. They were really good though. We made them on a family trip to the mountains with 14 people. They were gone in no time.

Yummy Honey Chicken Kabobs

I made just the marinade to use with boneless skinless chicken breasts on the grill. Served over white rice. It was good. My family liked it and I've made it a few times. I have made a double batch of the marinade and froze it with the chicken breasts (uncooked) so that they thaw in the marinade and are ready for the grill.

Angel Hair with Feta and Sun-Dried Tomatoes

This was really good. My family liked it alot. My mistake: I bought the angel hair pasta used in fideo from the Hispanic food aisle. I thought it would be fine but it was very sticky. It's what I had on hand. I will buy regular angel hair pasta the next time.

Pineapple Upside-Down Cake VII

This is so yummy. I've made it a few times and it's so simple. I also make the cakes in mini bundt pans - the pineapple and cherry fit at the bottom of the pan perfectly and it looks nice when done.

Judy's Strawberry Pretzel Salad

I made this recipe for a family gathering but made it for the diabetics that were here. I used sugar free jello, sugar free cool whip, light cream cheese and splenda (instead of sugar). I was only expecting two people to eat it but it was gone before I knew it and the family was coming back for more. The second time I made it, I followed the recipe exactly and it was great too. I will be making this one again.

Chicken and Biscuit Casserole

I followed the recipe exactly except for the biscuit part. I used a can of big flaky buttermilk biscuits instead. Also, I doubled the recipe since I was doing all the chopping anyway and put the second batch (not the biscuits) in the freezer for another day. My family loved it. We will definitely be having this again.

Rempel Family Meatloaf

This was very good. I don't normally like meatloaf and I did like this recipe. I used bbq sauce instead of ketchup because that's what I had on hand. Other than that, I followed the recipe and definitely will be making it again.

Ultimate Twice Baked Potatoes

These were so good. I made alot for a party and they were well liked. It's like eating a filled potato skin, with the bacon and chives. Next time, I will use bigger potatoes because it took a really long time to scoop out and then refill the smaller potatoes I had. What was left over, we ate with eggs for breakfast the next morning.

Chocolate Chip Cheese Ball

I made this and served it with storebought gingerbreadmen cookies. It was very sweet but tasted good. I served it at a party and there was a lot left. I think because cheese balls are not normally sweet, people didn't know what it was. I liked it and will make it again.

Banana Banana Bread

This is my favorite banana bread recipe. If I don't have enough bananas, I make up the difference with apple sauce. I usually sprinkle pecans on the top before I bake it so that they can be picked off by those who don't like nuts.

Best Big, Fat, Chewy Chocolate Chip Cookie

This recipe is very good. I've made it several times. Sometimes I add pecans and sometimes I make them with just MnM's pressed into the top with no chocolate chips. I also often make a double batch and freeze the dough in balls to bake later.

Sweet and Sour Chicken III

This recipe was very good although I did make a few changes based on other reviews. When stir-frying, I sprinkled the chicken with ground red pepper to give it a little spicyness. I added sliced onion to the vegetables. And I doubled the sauce and added 1/2c ketchup to it. Also, I used a 20 oz. can of pineapple. Served with white rice and there was plenty of sauce to spoon over the rice. I'm not sure if the original recipe would be 5 stars because I didn't follow it exactly but with these changes it turned out well.
